I love this book and have been cooking from it for a few years. I have a few favorites I make frequently, like the braised cabbage, Mexican beans, shepherd’s pie, Tex mex brown rice and lentils, and the ratatouille. Others I really like but don’t make often-baked beans on toast, pho, sweet potato bread pudding. I do think some of the recipes are quite complex-so many ingredients! So sometimes I modify the ingredients but mostly I save this book when I have more time.

I've learned to use 1.5x or 2x the spices and seasonings most recipes call for. I know that chefs and foodies generally use much fresher and better quality spices than I keep around my house!

It’s not just, I think, it’s also - like processed food - that the final product tends to favour mild to medium palates when it comes to spices and seasonings.

I agree with your closing review and the recommendation about borrowing first. My daughter-in-law borrowed it from the library and liked it so much that she asked me to buy it for her for Christmas. The recipes are generally tasty but as you said, not quick and easy. From memory, most have at least 10 ingredients. Our kitchens are now fully stocked with Indian spices and many specialty ingredients, which helps.

I’ve made quite a few recipes from this book that we’ve enjoyed. You definitely have to read through the lengthy description before getting started though. Her mushroom risotto is a go to for us although I don’t use oil or the miso & butter topping. I often sub out the mushrooms for whatever veg I have on hand. You and your family are much appreciated Jeremy!

Buckwheat slime is healthy and full of minerals just like oat slime. ;) I love toasting buckwheat in a saucepan without oil and then use it together with poppy seeds, date paste fruits and yoghurt to use it as a granola. It's really yummy! I follow Nisha on KZbin. Before trying a recipe I divide the ingredients in groups so that I can follow a simple structure and add the ingredients more easily.

I’m a huge fan of the Rainbow Plant Life KZbin channel and her website! Her tofu scramble on her website is the bomb! I enjoy it almost every weekend! I purchased some of her ebooks, which I really enjoy for ideas and variety. I do agree with your review about the steps in this book. I don’t cook from it often because of that reason. Like all of my cookbooks I have my favorite recipes and recipes I won’t make again.

I'm so glad you did this cookbook. I also really appreciate your frank summary of the recipes. It seems the flavours would certainly be up our flavour alley. PS: From my experience, I always add less water/liquid called for in recipes that go into the Instant Pot. There is so much liquid from the condensation that normally doesn't happen when cooked on the stovetop. Thanks, as always to you and your family.

About the Indian rice: if you substitute white basmati with brown rice, it will affect the flavors - you need more of them. White rice absorbs flavors differently from dense brown rice. That's why across the Middle East and Asia foods like curries and biryanis require white rice that's very flavour absorbant. 👍

Here's the Vegetable Lasagna I usually make: 9 vegan no boil lasagna noodles cashew ricotta cheese 1 zucchini, sliced into half moons 1 red pepper, chopped ½ lb. Frozen chopped spinach marinara sauce nutritional yeast salt and freshly ground black pepper dry Italian seasoning and/or fresh basil chiffonade 1. Grease a 10.5“x 7.5” x 1.5” baking dish and add some sauce to cover the bottom of it. 2. Place 3 noodles on top. Spread sauce on top. Top with ½ the zucchini and ½ the red pepper and ½ the spinach. Add s & p, Italian seasoning, and ½ the basil and nutritional yeast and ½ the cashew ricotta cheese. 3. Repeat previous step. 4. Top with 3 noodles, sauce, and nutritional yeast. 5. Cover with foil, put on top of baking sheet, and turn the oven to 350oF. 6. When the oven comes up to temperature, bake 60 min. Uncover and cook 20 min. Let stand 10 min. then serve. Cashew Cheese (ricotta-like) ½ c cashews, soaked overnight or with a 30 min. soak in boiling water 2/3 c water ½ t kosher salt or ¼ t regular salt juice of ½ a lemon ½ T arrowroot or 1 t cornstarch ¼ t garlic powder Combine all with stick blender in blender cup. If using for a recipe in which it will NOT be heated later, pour into saucepan and heat until thickens (You do not need to do this if you use arrowroot.).

I'm taking your advice on this one - I'm going to see if I can check it out at the library. I "almost' went straight to Amazon to order it, but then decided to wait and watch the whole episode. Glad I did. Most of the recipes looked pretty delicious! Your son, as always, was quite agreeable and gave good reviews. That sticky rice dessert looked yummy. Thanks Jeremy!

Great review! One suggestion to take the springform out is to fold a strip of foil into a long strap that goes under the pan and sticks up the sides before putting it in the instantpot. Then you can grab the foil strap to take it out. Mmmmm. I love Thai sticky rice! Edited to add...it's always amazing how different people have different tastes with food. I love some of the dishes your family disliked, but am not a fan of some you all loved.

Personally, my two favorite vegan podcasts are healthyveganeating and Rachel Ama. The recipes are easy to do overall and stuff I typically eat. I think this author/podcaster is more geared toward people with more time & patience to cook, like a lot of the podcasters. I'm sure the dishes are scrumptious and once I have more time, I plan on upping my time in the kitchen as well (I'll likely get the book). Appreciate your reviews and podcasts!

Love this video and your channel! A couple of notes that may provide context: 1) most Indian words with a “t” are pronounced with a soft “th” sound, i.e. rai-th-a 2) in the biryani, the fat is what carries the flavor of the spices through the dish. By not using oil, the spices will not permeate through the dish so more quantity of spices may be useful. Same with the tadka, no oil leads to less flavor as fat carries the flavor through the dish.

Hi again. So like fat soluble vitamins, many spices - not herbs - contain fat soluble molecules that when infused in a fat like oil, release their flavors more robustly than if ground and included in a dish without fat. Because Aquafaba is quite low in fat in comparison to oil, it doesn’t have the same flavor effect as blooming whole and ground spices in oil. There are some great articles by serious eats and cook’s illustrated on this. Also, vegan richa has an article on cooking Indian food without oil which also goes into how flavor is dampened. Hope this provides more context.

I found this book at the thrift store and honestly I haven’t cooked from it yet because there’s SO many ingredients in almost every recipe. Like most busy parents these days especially with the cost of food I try to find recipes with fewer ingredients. E said it best “too many ingredients. Like they cancel each other out”. You don’t always need 15 plus items to bring forth delicious flavors.

Agreed. I do think if the bulk are different spices it makes sense - you're making a spice blend - but otherwise sometimes less is more.

Great video. My husband and I live nomadically in our motorhome and don’t have an oven. Had heard of the pot in pot cooking method but it was great to see it in action! I definitely will take inspiration from this video for trying things like lasagna in the instant pot. I have the air fryer lid so can easily broil the top cheese by just changing lids. @@pbwithjeremy Crystal sugar hires a few hundred RVers each year to come and help them with their beet harvest for the month of October. It really helps you understand just how processed sugar is when you handle the beet that comes out of the ground compared to sugar you buy at the grocery store! (All the beets are machine picked, we are hired to direct the hundreds of truckloads a day that come to dump their beets into piles to await processing at the factory.)

Usually love her recipes as well. Agree with some of your points here. I've made quite a few from that cookbook that were wonderful and from her blog. Every not and then have to tweak something for my family's tastes though for sure. Have not made a bunch from the book though because they are so long. Family favorites are the Game day black beans,the plain steel cut oats,take out tofu & broccoli, Mexican Pinto(upping the spices),Lentil Shepherd's pie, One-Pot Bolognese Pasta with some tweaks. Next cookbook review I'd love to see is The Vegan 8. Quite a few winners in there for my family. Both Brandi and Nisha are about to come out with 2nd cookbooks. Watching you from Florida.

I try not to comment on videos that were shown too long ago. In this case, it's been five months, but this is kinda an important thing re: oats. I keep an extensive list of ingredients broken down into grams, macro categories (that includes four types of carb, btw), and calories, all for the purpose of using them in a spreadsheet I designed years ago as a meal/recipe planner. Why do I do this? A long time ago I was trained to think of nutrition in the diabetes framework of exchanges, and I still think this way. Over the years, I transitioned to thinking in terms of grams instead of ounces, but that's another story. So here's the deal with oatmeal: An exchange of grains (equivalent of one slice of bread) is defined as 15 g of carb, 3 g of protein, and about 80 calories. Fat is negligible in this case. Steel cut-oats is 15 g carb, 2 g of protein, and 70 calories. It's a little shy of the definition but close enough.1/4 cup of rolled oats are 13.98 g of carb, 2.65 g of protein, and 76.75 calories. Closer than the 2 tbl of steel-cut oats, but close enough to make things easier. So, TL/DR version: When switching out steel-cut oats for rolled oats, double the amount. That should take care of that soupy problem and yield a similar amount of macro nutrients.

Two cookbook suggestions for you to try…The While Foods Plant Based Cooking Show and Happy Healthy Vegan. Other recipes, Brand New Vegan. Chuck does not have a cookbook, but I’ve read his recipes are really delicious. Finally, another channel that does not have a cookbook, but I’d love to see you review some of Krocks in the Kitchen’s recipes.

I used to have her book but the only recipe we really liked was the African peanut stew. Same as your family was saying, I agree, many recipes in the book would be easier and maybe even faster to prepare stove top or oven.

Great video! I have this book but mostly use it for cooking ratios and times for beans/grains because as you point out, the recipes are pretty complex and often not really optimally made in an Instant Pot. I think the book would be better if it was aimed to be either easy instant pot recipes -- since a lot of people buy an instant pot to make cooking easier -- or to make it for the audience you suggest, people who don't have a stove, in which case the recipes need to be tweaked to avoid calling for things to be made on the stove. Also, some coconut milks won't firm up/separate when put in the fridge if they have emulsifiers added to keep the product mixed together/consistent.

Brilliant hack with rhe aquafaba. I use it all the time for all sorts of stuff but never would have thought of that I wonder if I could use aquafaba instead of oil in a magic shell to make frozen banana a tad more healthy. That book is one of my faves. I have many books too but I pretty much only cook on the weekends. I work ten hour days and am a solo empty nester so I have no shame in that. My fave recipe in there that I make all the time is the white bean stew. Her cheese sauce is also a staple as it is the best I have tried in my 7, almost 8 years vegan. I leave out the coconut cream though. It is fatty enough for me with only the cashews.

Okay, Beth Ann here from Kansas City! (Go Chiefs! 🏈) Even though I am single, I feel like you and don’t cook all the recipes in the Instant Pot either, but it was handy during a storm once when I didn’t have electricity for days and could use a portable station to cook my instant pot on. 🤷🏼♀️ I’m gonna try a few you mentioned here, and try some others have mentioned in the comments. Also, my friend found this book very useful in her dorm, in a situation like you mentioned so if you have a college kid keep that in mind.

I got this book from the library when it first came out and was soooo excited about it, because I love cooking in my instant pot! Until I tried the first recipe I chose. It literally took me 3 times the amount of time stated in the recipe! I’ve since made a few recipes from her beautiful website and KZbin and have had similar experiences…long time in the making but usually delicious. I’ve also had a hard time sourcing some ingredients and now I have lots of spices that I’m thinking I’ll never use again. Oh well, fun trying new things! When I have the time…

I have had a LOT of vegan cookbooks over the past 15+ years. This one is in my top 5! That being said, I have never attempted any of the desserts or lasagne since they seem like too much work and I’m also intimidated by pot in pot. I also get the burn notice when I try oatmeal :/ I really need to try that peanut stew recipe now!

I just feel like part of your family and I am getting a second chance to sit under a mom and dad teaching me the RIGHT WAY to eat and live... (my mom prioritized bluebell ice cream and cakes and other sweets over healthy eating, so if I wanted to eat good, I had to go to auntie and she taught me how to cook. I know I'm not a family member, but it is a good dream to have and I get to just glean from all your wisdom and fun with food and family. I hope I'm not too weird for saying this, but if I am, I would not be surprised. I see my future and it is bright because of your life mission and your family, so thank you.

When my son was little he loved ravioli but was diagnosed with celiac disease. When he was about 6 my mother found some frozen tortellini at a local shop and bought 4 packs for him. Several weeks later he asked to have tortellini for dinner but we had already used the last. He called his grandma and wailed "Grandma! How could you let this happen?!"

Good for you fixing your Instant Pot! I finally bought one yesterday on Amazon on prime deal day. I am so excited to make yogurt and bake something in it! I also used Aquafaba to dip cubes of tofu in and then breaded it and baked it. Really worked and very good outcome. I put it in a towel before to get the water out. I am learning so much from you and you are definitely influencing me to be more creative in the kitchen. I even made a dressing with the 4 tastes in it (sweet, acid, fat, and what’s the 4th taste?) Haha, yes, I have heard the pickle jar story. Really enjoyed this video, thanks!
