Soaking beans overnight and then changing the water to fresh is a good idea to do when you can -- because that will help relieve a lot of the phytates that block absorption of minerals and other nutrition. And of course then the beans will also cook much faster (AND be less gassy). Thanks for your helpful video!

That's what I've done since I first started cooking, about 50 years ago. LOL My mother taught me that trick; with 8 kids and not 8 dollars, she had to be creative in cooking, and beans were a staple in our house. She was very, very good at cooking them!

I’m a fan of soaking beans as well because I really suffer a lot with gas problems if they aren’t soaked. My problem is that most of the recipes for instant pot are for unsoaked beans and I don’t know how to adjust the time for the soaking.
@massages_for_world_peace8909
@massages_for_world_peace8909 2 жыл бұрын
@@pjschmid2251 I had that same problem, especially b/c I have a diff size than the standard 6qt recipes online. I had to experiment with soaked beans. So I did some beans, if they were undercooked then I put them back in a few mins. If they were overcooked i just said oh well and ate anyway or pureed to eat on a taco or chip dip. It only took 3 or 4 times each type of bean for me to get my own understanding of the perfect # of mins for each. Sometimes the second try for that specific bean would be months later, so make sure you take notes each time.

The German for an "Instant Pot" is Elektrischer Schnellkochtopf (electric quick-cook-pan (pressure cooker)) and that helped me understand how the device actually functions. When steaming veggies I do throw in boiling water from the kettle and that does speed up the process. I bought a white face flannel (as no-one has white face flannels in the household) and if I do a quick release I lay it over the vent to dissipate the steam. BTW when I first had a pressure cooker forty years ago as a student I cooked some rice and made the mistake of releasing the knob completely and had a rice fountain all over the kitchen LOL Fortunately the vent cannot be completely removed with an Instant Pot so no more rice fountains

If I’m doing a quick release I cover the nozzle with a tea towel which soaks up most of the steam.
@LetsEatPlants

I used to do that too until I read it's dangerous! 😥 This is what I read: "Not only can this damage your pot, but it can also create an unsafe vacuum effect, causing steam to be sucked back into the cooker." So I stopped doing it after that. I think it's suggested to release in short bursts of steam instead. 😊

If you use a metal scrub, you can easily clean the black accumulated grit on the bottom of the inner pot. I cook rice for 0 minutes and NR. Works every time. I use basmati rice and ratio is 1 to 1 and a half water. Am going to try the vinegar steaming . I do that for my microwave 😊 . I will also begin to use the programs as you suggested. Love my IP! I didn't know that you could change and save the preset buttons though....I'll have to look into that for sure. The Slow Cook button is super easy, I've used that a lot and it's nice to not have to have another device on my countertop. One tip for that is to make sure you pay attention to the pressure before you start the slow cooking because if you want it to be on low, you have to change it to low,. I've made that mistake before and thought I was cooking something on low for 6 hours but it was on high and pretty much done after 2 hours....thankfully I was home and caught it.

@@LetsEatPlants Yes! For my cool kitchen, the only way I have success in proofing dough is using my Instant Pot, set to Yogurt, Low, for a maximum of 2 hours. I coat the inside of the liner with a small amount of oil, and use the glass lid (I have the Instant Pot lid, which fits perfectly). This enables me to see how the dough is rising. If you do use the regular lid while proofing dough, make sure the pressure valve is set to venting, otherwise you will get a pressure buildup and will have to wait for the pressure to drop before you can get the lid off.

I purchased my Instantpot when it first came out and it does not have all these fancy settings as the newer versions have. So I use mine mainly for pressure cooking Potatoes and Beets. Will start to use the rice settings, though, thanks to your information. How long and with which setting shall I cook my beans please?
@LetsEatPlants
@LetsEatPlants 2 жыл бұрын
Hi there! For beans I highly recommend following this guide: instantpot.com/instantpot-cooking-time/#tab-id-3 For your instant pot you can use Manual (High Pressure) + whichever cook time is recommended by the Instant Pot timetable. I also do a natural release for beans. I always use a 1:3 (bean to water) ratio and then the cook times will just depend on which type of bean you are using. If your beans are older, use the longer of the cook times. So for example, if the timetable says 15-20 minutes, cook for 20. If you plan to use the beans in another dish (and therefore "cooking" again... like using them in chili or something like that), then use the shorter of the cook times. If I use the shorter of the cook times and they are still too hard when done cooking, I set Manual, High pressure again for 2-3 more minutes. You might also find this video helpful: kzbin.info/www/bejne/sH_IfpmDrriGnK8 😊

Good question! Press the “Porridge” button and use the minus button to bring the time down to 1 minute. Once it beeps & changes to “On”, you can press “Cancel”. The 1 minute will be saved automatically and will appear next time you press porridge. Essentially the IP just remembers all your previously used time numbers. 😊😊

One thing that I’ve heard that it’s better to use the slow cook function for rather than pressure cook is for delicate beans like white beans, navy beans etc. Pressure cooking them tends to make them break apart because the skins aren’t very strong. But if you slow cook them they come out creamy and perfect and most of the skins are intact.
