yeah, but why can't modern science invent some safe gluten-substitute that will make flaky croissants and soft puff pastry and stretchy tortilla wraps? we have all kinds of advances in materials and in nanoscience, but we can't invent something in food?

Cassava flour, olive oil, and water make excellent tortillas! They are better than any other grain free tortilla I've had.

Don't rely on dapsone either just because your rash isn't visible doesn't mean you aren't messing up your insides :/
