If we change the roadmap in middle of development, even if we consider the delay or changes as genuine. How can client accept those changes as he or she will be of a point that the roadmap must have been prepared considering all the factors

Good question. My answer is that you consult the client and discuss the issues before negotiating the change to the roadmap. If they are paying, they get a say. Unilaterally changing the roadmap is disrespectful at best and, at worst, may be a breach of contract and end you up in a formal dispute.
