Wow that’s from my hometown Shunde. I really hope you could come to Shunde and taste the real Shunde dishes! In Shunde we use a very unique type of milk called “水牛奶” which you cannot find elsewhere. It makes the stir-fried milk and milk pudding so different. Trust me, you can’t even find it in other cities of Canton including Guangzhou. Welcome to Shunde!

There is an old saying, the rough meaning is that Guangzhou is famous for its cuisine but the cooks are from Shunde.食在广州,厨出凤城。凤城is another name for Shunde.

I’m also lactose intolerant (as well as coeliac), but I had no trouble with the stir-fried milk in Shunde... I was a bit worried about the consequences of trying this dish at first, especially considering I had so much, but after the first bite I couldn’t stop, and luckily I was fine!

In Shunde we have another milk product called “牛乳” which is made in a way similar to mozzarella cheese. But they are thin pieces and could be dissolved in plain porridge. Healthy and tasteful Shunde breakfast!

after watching this video, i realized i got this confused with another Cantonese milk desert which has a strong ginger flavor and it's not something I like. My mom told me the one featured in this video is different. In that case, I hope to try this instead.

Love yr dad doing a fusion of the stir fried milk with the goose sauce. As for the Chinese sashimi or yu sheng or raw fish, it became the inspiration behind the Malaysian Lo Hei Yee Sang or Raw Fish served with julienned vegetables & fruits served during Chinese New Year. My dad hailed from Shunde, and many migrants from Shunde in Malaysia wud reminisce abt home or 'jiaheong' & food during CNY, came up with Chinese sashimi with local ingredients, thus the Malaysian Yee Sang was born. I am not sure if u can find this dish in a Malaysian Chinese restaurant. If at all, it wud possibly be over as this dish is served from the eve of CNY till the 15th day of New Year or the last day.

Amy, I was at that same restaurant a few months ago; I would recommend that. The species of fish used in the stuffed fish and fish cakes was dace: very flavourful but full of bones; apart from the usual bones it also has a vast number of tiny Y-shape ones in the flesh no thicker than fine sewing needles, making it difficult to eat. It also means that mincing the meat cannot be done by using a heavy knife to chop away, but the meat needs to be scraped off a tiny bit at a time with a spoon. It is obviously labour intensive, and the stuffed dace is a technical dish to make. My grandmother, who was born in Guangzhou (and left when the Kaiser decided to do something anti-social, IIRC), mastered this dish.

You should try the buffalo milk with ginger. It is a very healthy food. Try also buffalo cheese rice. The original roasted goose was roasted with LaiChi branches which gives it a smoked LaiChi taste.

Tried all these dishes in shunde. The place was famous for the fish cakes, quite typical of those found in that are itself. By the way it's very close by my mum's home village. And she made all those dishes for us to eat. Those fish cakes reminded me of my mum !! Remembered when I 1st tried it. The 1st thing that came out from my mouth was "that was mum made it"!!

roast goose I miss a lot! I used to eat it with a mango chutney. One of my American friends loved it too. he is Jewish and had never tried it before and his girlfriend (who became his wife) was so glad as it was her family's specialty.

Yeah! Finally my hometown’s food! Thanks for sharing Amy, love from Brisbane. Couldn’t go back for two years due to COVID, your video bring up my memory. You should definitely go to Shunde and try some more foods when border is open. Double skin milk and all other dairy in Shunde are made by buffalo milk, which is rich in fat, and this is the reason they said they can’t make authentic double skin milk in this restaurant. Food recommendations: Deep fired milk 炸牛奶, Steamed fish蒸鱼, Hot pot in Congee 粥底火锅, Shunde dumplings 鱼皮角, Braised eel 焖鳝, Stuffed wax gourd 酿节瓜, fish congee 拆鱼羹. Foods might scare you but taste good: Stri fired snake 炒蛇, snake congee 蛇粥, stir fired river snail 炒田螺, Shunde sashimi 顺德鱼生, Snacks: 牛乳(dairy product, taste like cheese), 大良崩砂(don’t know how to translate in English, but it’s really good), 姜汁撞奶(ginger juice with milk).

I had the roasted goose many times from that restaurant in Kogarah branch (such a hidden gem, small place), totally loving it. I had their fish dumplings n fried lotus root vege dish, heavenly! Man I was in Guangdong when covid started , I couldn't find a roasted goose unfortunately. And I can't seem to find any here in Montreal Canada. Sydney is obviously on point with authentically regional cuisines. I love your videos and your family! keep up the good work!

I was lucky enough to try this dishes cooked by my parents.Just interest where is the Shunde restaurant in Sydney when next time i visit there. The process of making that fish is extremely delicate. Taking the fish meat out and stuff it back are all done by hands. How long it cost to do that

Wow, I didn't think you could get roast goose in Sydney any more. I remember having it 30 or so years ago but not once since then. From what I remember it doesn't seem to taste as gamey as duck? Everything looks so delicious, I'm envious yet again.

Hi blondie, have a video suggestion that I think you and your viewers (especially northerners like me) would love to watch. It’s Chang’an noodle house at the Chatswood interchange (opposite Spicy Joint). They have very authentic noodle dishes from Xi’an, where I’m from. Would love to see your dad’s reaction when he tries 油泼面,葫芦头泡馍,粉汤羊血(they use duck blood as a substitute)。

My mother used to make Shunde style stuffed fish at home when I was young. She was born in Macau where the Chinese cuisine there is influenced by Shunde a lot.

Cantonese cuisine represented by Shunde cuisine (I say this because there are 2 more branches of Cantonese cuisine) is based on Guangdong's various ingredients and influenced by the habits from the Central Plaints and techniques and ideas from western cuisine. The key concept is "食不厌精,脍不厌细", meaning foods (originally for sacrifice ceremony) should be delicate and refined, ingredients should be fresh and prepared adequately. Therefore, Cantonese cuisine is all about the ingredients. If you are tasting fish, you taste fish; if you are tasting chickens, you taste chicken. All other ingredients used for the dish is there to compensate, to guide you to taste, to Celebrate, as the lady said, the main ingredients. As a result, we Cantonese are so obsessed with and crazy about the ingredients. All the techniques, is to present the best side of the ingredients. Cantonese chefs…to me they are like the crazy artists for foods.
