When I think of processed sausages I think things such as Devon, or the red hotdog sausages that don't look like meat anymore. I don't think of sausages from a butcher that still look like meat.

I wouldn't call E223 (or sodium metabisulfite for the rest of us) as making something processed. Nitrates or nitrites (even those coming from celery juice) on the other hand... And then there's things like mechanically separated meat, pink slime, and other meat sludge that have been shaped and formed. But... I think the definition is actually any processing beyond cutting and/or grinding.

Fresh made sausages with no preservatives begin to oxidize mere hours after they're made, to be fair to Dennis, by the time his product got to to the stores it would be brown & nobody would buy it.

Anything artificially made added would make the food processed. It's that simple. You are welcome. (Yes, that would include the E-2whatever preservative.)

was the sign the result of the WHO's reply? it'd probably be more thorough to read (ugh) the study that the WHO referenced to come up with its advisory to see what factors were tested to get their results. yeah to me i use "processed" as just a conversational adjective so kinda meaningless, and even with field people (or business owners) it seems to depend on their finer interpretation which still differs between them. :-(

Sometimes seafood marked as fresh has had preservatives added to it. Read the ingredients on bags of shrimp they add chemicals to it. Isn't "processed meat" more of a national industry issue not a WHO issue..

Sodium metabisulfite gives me serious breathing problems, makes my throat swell up and there are reports of people who have died from it as anaphylaxis it's a chemical made with sulfur and ammonia. I spoke to a wine maker about this years ago and he claimed that naturally occuring sulfites are molecularly different from unnatural man-made added sufites aka E223 sulfite, sodium bisulfite, metabisulfite, whatever you wanna call it.

I'm allergic to E223. It's a man-made chemical created from ammonia and sulfur. I would not buy these sausages. I make better sausage at home anyhow.
