They are all really good recipes. You’ve inspired me when I really needed it. I wish I could explain it to you but it would mean losing the love of your life and I don’t wish that on anyone. I just made the white chicken chili and loved it! I did rotisserie chicken and used Goya salsa Verde in medium. I will definitely be making this again! Came together in 30 mins and perfect to take to work for lunch too. Thanks Mandy!

I have that verse tattooed on my ribs! I love it. I got it when my Mom was diagnosed with a rare form of leukemia and even though she’s passed now I still look at it every day and it reminds me of those last few months together and makes me smile! Her design is beautiful.

Mandy you have to do the same recipe but substitute your homemade salsa you made in the Ninja last week for the salsa verde and add a half a bag to a bag of shredded Mexican cheese. Ahhhmazing. I can’t wait to try this version you made as well. Definitely on my list for our next rainy evening!

Loved your hack with the wet paper towel , I will have to try that. Another one you might try is running a stainless steel knife under cold water while you hand rub your fingers on it after chopping onions or garlic, it will remove the smell from your hands. Just be careful that you don't cut yourself.

Mandy l have to tell you what happened when l cooked the cheese and bacon mini meatloafs. I prepared them and gave my son the exact cooking instructions. He cooked them for 1hr instead of 20mins. They were a touch blackened as you can imagine but they still tasted good. I can't wait to try them again but l will cook them next time. I have to say he is an adult not a child but never mind

Regarding the white chicken chili… You know how Steven loves the broth. I have had a super similar and I crushed tortilla chips into the broth after it is served. It is so yummy! The broth soaks into the chips a little bit and it is heaven! Tell Steven he has to try that next time and you will love it too!

I also have one very similar but I add fresh garlic and onion to the soup and trop with tortilla chips, a squeeze of lime, and fresh jalapeños in addition to what she did. It’s really good. The tortilla chips are👌

I made the White Chicken Chili this evening in my instant pot on the soup setting. Talk about easy. The addition of the cheese and avocado is delicious. We added some sour cream too. It would be great with a quesadilla or salad. Having one child who cannot have gluten, and one who cannot have dairy, this is great. She just leaves the cheese off. I should send Mandy my Mexican Meatball Soup recipe. It's another one that is great with a salad or quesadilla and wonderful on a cold night.
