How wonderful to see a Chef given her place of importance and an opportunity at the podium to explain her skills and unique experience. This is truly a people’s administration, the Obama WH period was known to be inclusive but even they did not invite their head chef to the podium for an address to attendees. More governments should treat their staff in a similar fashion as they deserve it.

Yes.. i sometimes eat Kodo millet / Kodri instead of rice... its does not make you feel heavy or bloated so ideal for lunch...thai red cargo rice Or any rice with red-grains basically Or black-rice are rich in nutrients and are light..no bloating or heaviness... i make quinoa and black-rice salad bowl all the time... its yummy...

Store-bought vegetarian salad bowls in USA are crap but home-made grain-salad-bowl Or lentil-salad bowl taste good. Chef in the video said marinated millets - I don't know about millets but home-made marinated-quinoa tastes amazing...for home-made quinoa-black rice salad - quinoa, black-rice, grape tomato, steamed corn, red-onions, cucumbers and cilantro/coriander mix is marinated/coated using marinade/dressing made of garlic, lemon juice, oregano oil and herbs like marjoram, thyme Or rosemary, black pepper, coriander, sea-salt, avocado oil etc...yes i either add some finely chopped green-chili Or red chili powder in addition to the above to the marinated quinoa to suit my indian palate as i don't like completely bland food but marinating veggies and/or grains really gives the dish a subtle but unique flavor but yea the appreciation for marinated and/Or pickled/fermented foods may develop overtime after staying in foreign country for a longer period of time or some may not just like it.. but i find that these kind of recipes can be easily customized according to one's palate and preference...but yea some restaurants in USA just dont know how to make good vegetarian food...my co-worker once brought vegetarian pasta salad to office and really liked its taste and then i discovered she basically had let the pasta marinate in the refrigerator the whole night which really brought out its unique flavor.. i am a vegetarian so i was not familiar with the art of marination but it takes really long time for the food to soften/get cooked properly on the electric-coil-stove in the rental apartments here in USA so often times its just easier to prepare healthy marinated quinoa-black-rice salad bowls Or healthy noodles like buckwheat noodle soup with marinated Or naturally fermented flavored vegetables...it tastes good and is healthier than constantly eating out in restaurants...but to each his own... i came to know about portable gas-stove few months ago but i am now as such going to move back to India in upcoming few months so i am not buying the portable gas stove...but yea for big events like these, having indian food items along with the marinated millets that the chef made would have been better instead of not having any indian food at all because many people like marinated grain-salad bowls only on the side and not as a main meal while many people including indians (predominantly those who have had prolonged foreign stay) like having salad-bowls as their main meal...so yea a big political event like this definitely does call for a full course meal unless its not covered in this video or something..
