What the Difference between Semester System Colleges and Quarter System Colleges?

I'm debating whether I should attend Berkeley or Davis. Berkeley would be extremely challenging due to the competitiveness; on the contrary, the quarter system at Davis seems fast paced.

How can a college year be split up? Like can a student start in spring until summer then continue in fall? Basically I’m wondering if I can do this: Spring semester (take summer off) and continue in fall through spring and the take summer off again and so on
