The pasta casserole reminded me of my grandmas Filipino spaghetti recipe. She just put a can of cream of mushroom soup in with some cheap tomato sauce like prego or ragu and some diced hot dogs. This is the “accessible” version since we lived really far from Asian grocery stores. The classic version has banana ketchup which can be hard to find.

Today's the day I get the camper kitchen ready for our 5-day stay at our favorite camping spot. Our first low carb camping trip. We're making a menu, shopping our cupboards and fridge, and hopefully won't have to buy much. Is that grill electric? I'm kinda in love with it already. I love burgers and keto pancakes, ooh, and steak. I remember rice 😢 Actually I carb cycle. We just had creamy dreamy rice, on my last boost day. We're just low carb most of the time.

Ooh, I bet I could make that french toast casserole low carb yummy. Might try that when we get back from camping. Gideon is adorable 😍 Nice to see him. I love a good mac and cheese. Chicken picata looks delicious. I'd put that on a salad maybe. I'd use parmesean to thicken it. Low carb thriving. I'm cooking up a bunch of bacon, hard boiled eggs, and chicken to dice, for our camping trip. Speaking of appliances, I just ordered a plunger blender, for the camper. Western wa forests don't get enough sun to help us charge our generator, and we primitive camp mostly.
