Some requests, and I don't know that I've typed it out before!! This is the Dutch Baby Pancake Tray Bake that I do! :D ---It is 18 eggs, 600g of milk (I use one tin of coconut cream and then top it off with some more liquid, so probaby 1.5 cans), a tbsp of sugar, tsp of cinnamon (both optional) and 275g of plain flour, I use the thermomix to put lots of air in it and whisk it up, but you can definitely do it by hand. The pan needs to go in the oven with a good heaped dessert spoon of fat in it (I tend to use ghee) that needs to be bubbling hot and then you pour the batter straight into that fat and close the oven (or lid to the bbq for me hehe) cook at 200-220ish for about 30 mins (but its variable, being that I have a barbecue, you'd have to keep an eye on it) once the sides are all puffed up and the middle is firm its ready to eat! :D

The fresh lasagne sheet noodles you can get from the cold section in the supermarket works really well, but realistically anything works you just have to cook it for the right length of time hehe.

I think I go to a little more effort than the average to have that variety, eating is hard and quite painful for me generally and I don't have much of an appetite a lot of the time, so I go to the effort of making food I 'want' to eat, but also, I have time! :D

Hi Nyssa, as far as i'm concerned I don't know how you do what you do and be a mama too!!! i love your videos the way you did when you first started! if it gets to complicated are involved i'm hopelessly lost and 2nd guess myself! Please just do you thats how you have gained all your followers and those to come! I hope one day when we are up in Qld you will be kind enough to allow my husband and I to visit and I could watch you make your magic first hand. But for now enjoy the time with your family and cooking what you like, its like going down 🐰rabbit hole ...don't stress ❣ I do have a question if you don't mind me asking, 1st I'm no real cook I have tried to make Brownies with walnuts, 1st one I made I used cooking oil instead of butter (mind you I was following the box recipe) it came out dry and hard, next was a cake slash brownie it was worst than the 1st one and the 3rd I bought a brand new brownie mix but used butter instead of oil it was a little bit better but still very dry! I am following the directions (as you can see we love brownies lol) i just don't know how to make them moist ! 😥. Can you help? I love you videos Cheers
@OurSmallFootprint
@OurSmallFootprint Жыл бұрын
Thank you Linda! :D re brownies, I always feel the simpler the better, one of the easiest brownie recipes I ever make is 1/2 cup butter + 1tbsp of oil of choice 1/2 cup Cocoa 1/2 cup flour 1 cup sugar 2 eggs vanilla and salt. optional cup of add ins, like choc chips or walnuts etc. You want to make sure you don't overcook it if you want it fudgy in the middle, 20 odd minutes maybe 25 and you want it to look only just set in th emiddle, it will set up a bit more as it cools, and I always go for under done rather than over, because I prefer to eat it fudge like than for it to be cake like lol. In regards to box mixes, I don't use many tbh, but the ghirardelli brownie mix you can get from Costco is pretty darn good, swapping out water for milk if it asks for water as the liquid can help too! using just egg yolks instead of whole eggs is another way to get more fudge and less cake!

I use upside down stainless steel colanders, to lift the baking trays up off the heat plate and then just keep the burners on low! You'll have to look at your barbecue and see how many burners you need to keep running for like holding at 180/200 (375/400) for baking kinda thing, like I tend to turn one of my middle burners off or it gets too hot in there! But being winter you might need all of them to keep it warm, it definitely differs depending on the outside temperature :) Just remember if you have an open grill side, you can't use ceramic baking trays over that side, because the flames can be too much and it can crack, only over a solid plate! :D

Please tell me more about the Dahl! I have some China Dahl I need to use up
@OurSmallFootprint
@OurSmallFootprint Жыл бұрын
I do a really really simple one, I don't soak or anything, I give the dahl a rinse, a couple of cup fulls, I cook off onion, garlic, sambal/chillis and curry powder in some ghee/oil/butter (I use Baba's brand meat curry) once that smells nice I add a tin or two of tomaotoes (depending how far I want it to stretch) with some stcok, maybe a quart, add the dahl and let it simmer until the dahl doesn't have that hard inner bit anymore then add a tin of coconut cream let it simmer a bit longer and then taste and adjust - sometimes I add some salt, sometimes some brown sugar, sometimes some fish sauce it really just depends on the curry powder you use I think! and the amounts of the chilli/curry powder really is variable for taste/heat depending on what you are after, we like ours quite mild, enough heat you get a buzz in your mouth, but not so much that it burns!
