I would use different colored gel pens so I can write a follow thru with what I previously wrote down. Laser measuring tool so I can eliminate most measuring tools and not having to walk back-n-forth.

How do you sanitize all those trays?

We 1) spray the trays down to remove soil, 2) soak them in Sanidate 5.0 for 10 minutes, and 3) spray them down to rinse. Easy substitutes for sanidate would be 10% bleach or dilute vinegar.
