Lex Luthor is my favorite villain. Perhaps my favorite character, such a great dichotomy, were it not for his obsessive hate of Superman, he's basically a darker version of Tony Stark. I even get my head shaved referring to it as getting my Lex Luthor done.

I always loved seeing Lex either teaming/being a member of the Justice League. Proves he truly can be a great hero. Crisis on Two Earths, JLU finale and Reign of The Supermen are some of my favorites.

I doubt it. He just simply wanted to see how far he could go. He is genius in his own right, but still mortal. The way he does things when they want to set him up to be the bad guy is what you would expect. Comic villainy. But who in their right mind would pick one of the strongest beings to exist as his rival? Granted, Superman would always be standing in his way no matter what if he had a true lust for power. But he's not stupid, he's not a degenerate, and seems to have only one goal. To push himself to accomplish as much as he can based on the situations that he himself stirs into motion. At times, he seems that he himself is holding back his best cards, just to make things more challenging. And therein lies the problem. He has to pose himself as a supervillain in order to achieve what he wants. Other "bad guys" just want to obliterate everything with no real goal in mind. And therefore they are useless to him. The only way he gets what he wants, the challenge of a lifetime, is if he makes Superman an enemy. It's more or less the only way to assure himself that he will always have to be at his best if he wants to thrive. Or, more to the point, have his accomplishments matter. Who else can say they their rival is Superman and still be one of the richest men in the world in spite of that?

A lot of his earlier motivations for his schemes came from his distrust of Superman. He hated that this super powered being came along and was instantly near godlike just because of his species and wanted to prove (or at least make everyone else believe) that humanity didn't need him and thus the Lex ego was born

I like the stories where Lex is a good guy, not really when he's a super hero, so his clashes with Superman are just the idea of a man being able to stand up to a God. He doesn't want Superman to save the day, he wants a normal man to be able to. Most of the time it's normal villainy, but I like it when he's not really a bad guy he just wants to prove we don't need a Superman.

I’m surprised you didn’t include what he did in the DC Universe MMO. He basically starts the entire plot by informing heroes in the past (this Lex comes from an Earth that was conquered by Brainiac) that Brainiac is coming to invade Earth, and urges the heroes and villains to work together to stop him.

Honorable mentions: Smallville version of Lex Luthor helped the heroes of his universe stop a monitor from rebooting their universe in the final arc of Smallville Season 11 comic series (recommended) In Elliot S! Maggin's fantastic Superman novel Last Son of Krypton, Lex helps Superman stop a terrible alien plot of genocide, universal domination, and... a galactic real estate scam. (seriously, it's a lot better than it sounds). In Superman #167, Luthor turned against Brainiac in order to save a planet who viewed his as a hero.
