Hi Imran, just discovered your channel and will be ordering the ebook. we struggle to find a consistent decent takeaway here in Huddersfield so I’ve taken to making my own from other you tubers but their lists can be massive and time consuming but do taste really good, I’m looking forwards to trying your straight to the point no mess approach and probably more traditional home cooking. Can you do a sweeter/ sour curry recipe, Dansak or pathia are my wife’s go to. I’m always cooking two curry versions,1 for me and one for the missus. Is there something out there that all starts the same then can be halved then tweaked saving me a headache and pans. Cheers, keep up the content👍

I recommend not using chicken breast as it’s dry. But if you do, use a mix of thighs and breast. And add around 10 tbsp of oil

Reduction isn't simply removing water, it helps to lose any off flavours from volatiles, especially useful when making stock. In this case I think it's also about caramalisation. If you start with all the water in at once it's going to take longer to reduce down to the right consistency for this to happen, and you would still need to add back in once it's ready for it anyway.

You can reduce this if you want!!! It serves 4, so everyone can have some masala to enjoy. You can always just at 350-400ml if you wanted, or just reduce it down further. It’s preference.
