In Saint vincent I learned how to make those from my grandmother, they were steam cooked ,no flour used ,using a large pot a few sticks from the bayleaf tree to place in the bottom of the pot covered with several cups of water place the ducana on the sticks to steam cook .

In Antigua and Barbuda we use Banana Leaf or Seaside grape leaf to wrap it or foil paper. Raisins are optional. Also we add nutmeg, cinnamon and sometimes vanilla essence to season it. We eat it with salt fish, it also tastes good with smoked redherring or shad.

My mom makes the best ducuna and instead of flour she use a tanya or edoo to hold it firm

You know my husband and I discussed this recipe because his mom makes it in st. Vincent and its only after I made the ducana he told me about adding eddoes. BTW this is how i spell TANNIA is that the correct way? Where did your mom make the ducana? Thanks so much for watching and for taking the time to share your mom's secret ingredients😊😊😊😊

My grandfather used to do this for us as children. Even though we lived in The Bahamas, he always kept a piece of home and his culture with him and taught us that as children.

They are very appetizing - comfort food. In Trinidad we make something similar called Paime but with cornmeal. I will be doing that video soon. Thanks so much for watching

There's a Jamaican restaurant near me that makes "rock cakes" which have raisins and coconut in them. Looks delicious!

Hey, just a correction. This dish is not popular in St. Lucia. If you ask a St. Lucian what ducana is, they/we will look at you strangely. What's popular in St Lucia is paime (same namesake and concept as Trinidad i.e. cornmeal, pumpkin, spices etc.). Ducana is popular in SVG and the islands in the Lesser Antilles.

In St. Lucia we call it pehmi. We eat it as is, not served with salt fish

We make it in st.kitts and Nevis but we call it conkie we boil it in banana leaf or sea grapes leaf and a special leaf we call conkie bush foil paper give it a funny taste
