Ducana Recipe
Ingredients List
-------
2 inch piece grated ginger
1/2 tsp cinnamon and nutmeg
1 tsp vanilla essence
1/4 cup water
1 small carrot grated
1/4 cup sugar (use to preference)
1 cup Plain flour
1/2 cup coconut
1 cup grated sweet potato
Banana leaves or foil for wrapping and some string for tying
1-2 cups water (for boiling)
Cook for 25-30 minutes and drain fully. Cool before opening as remaining water in the leaves may burn you.
Always taste and adjust seasonings as my recipe acts only as a guide. Individual tastebuds are different and substitutions can be made throughout.) Terri

Love this dish! Highlights the oneness between Caribbean countries with Africa. In this case Ghana 🇬🇭. Also known as Donkunu/Kenkey there, similar in name to Dukunu (tradition name in Jamaica). Main ingredient is cornmeal in all dishes.

Yes Antiguan Ducana :)! I'm so hungry now! I've never added ginger before and usually use golden raisins in place of carrots for sweetness. Still, nice work!

Nice job! I’ve been looking out for your recipe lol. What a treat. We call it ducana in the 🇻🇮US Virgin Islands, too. We use white sweet potato, coconut, sugar, spices and sometimes add raisins and we mostly wrap in foil paper. But I love the consistency when wrapped in banana leaf. We traditionally eat it with salt fish for Easter on Good Friday.

In Barbados it’s called Conkie. Substitute carrots with grated pumpkin and corn meal flour used

I literally thought this was Nigerian moin moin! Very very similar in terms of texture, it’s also traditionally wrapped in banana leaf and steamed! It’s just fascinating to see the similarities in cuisines 🤗

Its the same, as blue draws has an alternative name in Jamaican Dukunu and Tie a leaf. Dukunu comes from the Akan Tribe of Ghana which they call it Donkonu/Kenkey. Similar ingredients and cooking method. 👌🏾 🇯🇲🇬🇭

I'm from Belize and we call it Ducunu,,but we make ours from corn,,sooo Yummy 😋🇧🇿. We eat ours with chicken, pork or by itself.

So true my dear.I'm from Antigua 🇦🇬 living in the USA 🇺🇸 the names of our food are different but the same thing. My friend from Jamaica 🇯🇲 they call Dukuna Blue Draws.its made slite different but is the same

Back when in primary school (Tortola,BVI)we made these along with the teachers. First time ever, eating them. I believe the recipe came from someone from Dominica. They were delicious! 😋 Since that time, I think the last time I had some was last year, when I went home for vacay, I believe.🤷🏾‍♀️ You go woman! 👍🏾

Dokun is a plantain leaf wrapped steamed corn dough food from Cape-Coast and the Fante people of Ghana. We have rice and You also have maize versions in the Caribbean There are other Caribbean foods with their roots in West Africa not surprising

Wow this bringing up all the feels! Grandma use to make this when I was younger with her sweet potato pudding 🥺🥺😭😭☺️☺️☺️. But she called it blue drawz in Jamaica.

Terri-Ann you are always on time with the recipes! I was literally in two minds whether to pick up some banana leaf at the market on Saturday in order to try and make this for the first time. Omg it's crazy how two totally different recipes can be so different yet look exactly the same ! This looks exactly like Puerto Rican Pasteles but the ingredients are completely different with the exception of them both being wrapped in banana leafs and boiling at the end....

Haven’t had this in so long. This was one of my favorite dishes growing up. My mom and granny used to make it with salt fish & spinach on the side. Soooooo goooooooddddd. 🤤 Anytime my mom makes it I rush home to get some haha

Thanks so much for this recipe. My son’s Auntie did give me this recipe about 20 years ago, and I lost it! I remember she used white sweet potato in her mixture..Also if you don’t have the banana leaf, you can put mixture in foil paper. Now I can make these Ducana properly! Yes Mon, blessings!🙏🏾

We use a similar technique to cook something called Hallacas in Venezuela. Interesting to see how the technique and what other uses for it has spread across the Caribbean :)

Wow!! We have a similar dish made from cocoyam and wrapped in a leaf and we call it kwacoco bible lol. It's so delicious. I'll try this recipe because sweet potatoes and coconut are my all time fav. Thanks for sharing this recipe sis. You rock!!!🥰🥰🥰

I normally allow rhe water in the pot to come to a rolling boil and then add the ducunna to the pot. I also use more water so the ducunna is completely submerged when I cook it

Yes a derivative Joycelyn. I believe in Ghana they also call it Donkunu, which in Jamaica its traditionally called Dukunu. Our Ghanaian ancestors passed it down to us 🇯🇲🤍🇬🇭

Adaku O. Yes, there’s a dish with Fish, pepper sauce and Kenkey that is commonly eaten in Ghana. But ofc you can eat Kenkey with whatever meat you choose. Similar to how we would eat dumpling/boiled yam to any meat of our choice

This is somewhat just like pasteles but this is different always for Christmas, Thanksgiving, New year's my abuelita make it, it's grated green banana I think grated plantain to with grated yuca etc etc***

@englishgnome No potatoes and no yam, but green banana and yautia, achiate with chopped pork, olives, and her spices cilantros sazon etc etc my abuelita make it different from other people never have I tasted anyone close to her pasteles. Other people make it different and no dam flavor.. No Lie. My mother know how to make it just like abuelita she's the one that taught my mother how to cook and then come me from watching and helping, Lol 🤭😆for real.

Love ducana, do you have a recipe for salffish using a little tomato paste? Growing up we called it stew saltfish and the regular way of cooking saltfish we called that one boil saltfish lol.

In Haïti we have a quite similar dish called Doukounou . Unfortunately, the recipe is almost extinct. Even my parents generation doesn't know how to do it . I'm soon to be 30.
