I baked this cake yesterday, but only put seedless raspberry jam in the middle. Only made half the amount of butter icing, which I put on the top, then sprinkled coconut flakes all over. My friends could not get enough! An absolute winner! Thanks so much for sharing this recipe.

Love the recipe it takes me back to School dinners. Wee tip regarding the sugar. Buy normal granulated sugar at half the price of Caster Sugar and blitz it in a food processor for a few seconds and voila, caster sugar. Infact, keep blitzing it and you'll get icing sugar!

My friend’s birthday is coming up and we are always teasing her about how much she loves sprinkles. Im definitely going to make this for her! Also, here’s a tip if you mix your icing in standing mixer, put a kitchen towel over it after each addition of confectioner sugar. Keeps it from flying all over your kitchen.

This has taken me back to around 1987 sitting with my friends having lunch in the school hall. I remember one lunchtime me and my bestie having a full blown argument over who liked Michael Jackson more! We still laugh over that now aged 44. P.S. I still believe it was me! 😂😂

You can put granulated sugar in the blender for a short time and Change the texture to caster sugar

That cake looks delicious 😋 you can also use unflavored dental floss to split a cake, I never could cut straight. The "thanks" button must only be exclusive to some as I have had other creators release videos today with no thanks button, but it is a really cool feature.
