This moist and spicy Ginger Loaf Cake/Gingerbread is so delicious that you’ll cook it over and over again. It’s rely quick and easy to make and your house will smell amazing! Serve it warm with ice cream, butter or salted caramel. Great idea for festive season!
Ingredients:
150g butter
375ml (1 ½ cup) milk
200g (1 packed cup) soft brown sugar
240g (3/4 cup) golden syrup
2 tsp vanilla extract
1 tsp baking soda
1 egg
300g (2 cups) self-raising flour
2 tbsp ground ginger
1 tbsp mixed spice
1 tsp ground cinnamon
½ cup chopped crystallised ginger (optional)
If you add crystallised ginger it’s better to chop it thinly, otherwise it will sink.
Bake in the oven 180C/350F fanbake for about 45 min
Tin size: 27cmx11cm
If you don't have self-raising flour you can easily make it at home:
just add 2 tsp of baking powder into 150g of plain flour. That's all!
