I think I prefer to use molasses instead of the golden syrup. That works too. Very lovely bread.

I used molasses and it was sooo overpowering. Ended up throwing cake away. Golden syrup is the best.

I made this cake about 5 days ago as my daughter asked me to make her gingerbread. I used 200g golden syrup and 40g of treacle and a touch more of the spices cos I like it spicy too and a large pinch ground cloves x took over an hour and when it came out oven I couldn't wait to taste it.😂 Yip cut a bit off while still hot and on eating thought it was maybe a bit too moist but the longer you leave this cake before eating it is perfect and I mean perfect. Without a doubt the best gingerbread recipe don't use any others and waste your time as I have did the recipe is bang on I'm away to make another.

I made this! It came out so delicious, soft and squidgy. I used 1.5 your recipe and made it in an air fryer at 140 degrees Celsius, it took over an hour and a half but it was SO worth it! We have heaps of it and eating slices of it everyday! I added way more ginger than you as I love it spicer. YUM!

Hi, you have to remove it from heat and whisk in baking soda and egg straight away without waiting.

Looks good except I have no idea what golden syrup is and what mixed spice is (paprika, mustard and garlic?). It would be nice to present it so that other people can actually understand and make it.

Golden syrup or light treacle is a thick, amber-coloured form of inverted sugar syrup made by the process of refining sugar cane or sugar beet juice into sugar. Mixed spice is a well known product, if you don't have it you can use a mix of: coriander, ginger, nutmeg, cloves, cardamon. Hope it will help.

I googled and found that a substitution for Mixed Spice in the US is Pumpkin Pie Spice. There are lots of substitutions listed for Golden Syrup as well, if you don’t want to order it from Amazon.
