Suet: found that here in Florida, at the only butcher I found who'd even sell me any (a neighboring town, about 40 minutes drive) wellll, that suet is best for bird feed. ~sad chuckle~ Ah well. Atora will probably work, *if* I don't pre-heat my oven (which totally heats my kitchen) - or - as you say, shortening will do in a pinch. On whatever up-side: Shortbread! It's what I'm making for party favors, for Burns Night Supper! YAY! I'm *so very thankful* you've shared a simple recipe that I can handle! 😄

All pies, sausage rolls, and savory pastries benefit from atleast 40mins sitting in the fridge before baking. Oven preheated. Out the fridge, only egg wash at this point and straight in oven.

I haven’t had a bridie since I went to Scotland in 06. I just made your recipe and they were amazing! Just a good as the bakers in Galashiels! I also used your pastry recipe and Wow! Best pastry I’ve ever had. Definitely will be using it to make my thanksgiving day pies with! 🏴 just need to learn how to make haggis! Haggis is so good!

as a boy growing up in Canada in the 1950's and 60's my mother made a variety of pastries with meat fillings saying it's what her mother made for their family. I visited Scotland recently and went to visit where my grandmother was born in the late 1800's, Arlynlea cottage in S. Whitehills, Forfar. Visiting Forfar I realized why meat pastries played such a big part of my childhood. As I travelled Scotland and mentioned my Forfar roots the almost universal response was "ah bridies"

South America needed people to work the mines. The best miners came from Cornwall. They brought Cornish pasties to south American and these became empanadas over time

I could listen to you with your accent speak all day! I love it. I love your great channel with so many amazing Scottish dishes I recall. Some I never had, some I have tried when I was there for a few months. I had to look up suet, and I'm not sure we have that here in the states, but we have lard, which doesn't have as much flavor.

Talk with your local butcher shop. Here in the states we have often bought suet to make our own blend of birdseed suet, for winter feeding of our feathered friends. I haven’t purchased it for human consumption, but there’s no reason you couldn’t! Every state has local USDA approved butchers. Look near where cattle and sheep are raised, also where deer hunting is popular.

Cheryl, not sure if you’ve done a video like this yet or not, but it might be nice to have a video on the area and some history on a castle or something like that. I’ve only been to Scotland once it was around 2017 when they were running a special airfares to Edinburgh I have to say has to be one of the most memorable trips of my life. My last name is Allen, I was told that could be of Scottish dissent, I’d like to think so! Can’t wait to try these Bridies!

Looks divine. im deffo gonna make them tomorrow. I will alter the recipe a tad bit tho. I often find that adding raw onions to pastie meat results in them still being a bit raw and chewy after baking. I will sautee the onions a wee bit so they soften up before adding them to the mince. I also might add a wee bit of mustard. I like savoury foods a lot but im not always keen to add salt. i prefer stock or worchestershire sauce or aromat or something like that. Obviously one canae add stock to pasties. What i usually do is to grind up a stock cube in a bowl with a teaspoon until a fine powder. then adding it to the mince. Love yer uploads. im salivating lol

I am pleased you mentioned "chopped steak" I understand that the Forfar bakers use hand chopped steak or they did when I lived in the Toon in the 1970s. Now I have to make do with second best, a cornish pasty. 😋

Went to a wedding in Forfar back in the 80's and there were Bridies (pun no intended) at the reception. A wee bit greasy maybe but, gods, they were scrummy!

They are only a Forfar Bridie if they are made here in Forfar. If they are made anywhere else they are just Bridies. Hope you enjoy them, they are delicious.
