I can't stand it when an established actor mistreats a younger actor, extra or crew member so it's sad to find that such a great actor as Gene Hackman might belong in that group.

In 1983's Valley Girl where Randy (Nicolas Cage) is playing a carhop and totally screws with Tommy (Michael Bowen) by dropping his chewing gum into his lap, Bowen's and Deborah Foreman's reaction made it seem like an unscripted moment.

These "unscripted" moments are simply not true. Turning up the volume is not scripted, yet the camera zooms in on his hand before adjusting the volume?

What often happens is that the actor does something unscripted like this, and if the director really likes it, they'll redo the take and adjust the shot accordingly. It's unscripted, not spontaneous. Something spontaneous would be like the Joker's reaction to the hospital bomb not immediately going off in The Dark Knight. That's a pretty famous example because redoing that shot would be prohibitively expensive.

The Bullit burnout scene is completely on script. A smoke machine is in the trunk, with holes drilled in the undercarriage, to ensure the desired effect is achieved.

That 'reverse burnout' in Bullit also completely shot that cars drivetrain, you can see the rear axle hopping as the diff ruins itself from that reverse throttle
