Amish thick sliced, center cut, apple wood smoked, baked in the oven 425° for 20 minutes on a foil lined shallow cookie sheet. Been doing it this way for 20 years. Works awesome, easy clean up. I should add, the bacon will be just slightly undercooked. That's so you can finish it up in the frying pan with whatever else your having for breakfast, or cooking on the grill. If you need the whole pound cooked for a single serving for the family, simply flip the bacon, cook 3-5 more minutes then remove from oven and place on a paper towel lined plate. I cook between 2 and 3 lbs of bacon a week like this on two cookie sheets. After I get some of the bacon grease off and the bacon is cool to touch, I cut each slice in half and bag whatever we don't use right away.

What's up Big Cat all the bacon looked DELICIOUS, you can't go wrong with bacon or the bacon grease but in the industry Chef are taught to say Bacon Essence. Again glad to see you cooking!!!!!

Love the video Mike! All the flavors sounded fantastic too. About three years ago I cooked bacon on a cookie cooling rack on a sheet pan in the oven. I have never fried bacon since. Give it a try, I think you'll like it. It's super easy with very little clean up. Oh yeah cover the sheet pan with foil. Have a great weekend brother 👍

Black Label is my favorite brand of bacon though I'm not sure why. I used to buy thick cut until I read that it is chewier than regular cut bacon. I love maple syrup, but I found I didn't like maple bacon. I felt center cut was overrated and overpriced. I haven't tried applewood-smoked bacon, but I want to try cherrywood. Just affording regular bacon is hard enough on my tight budget. It was an interesting experiment to watch, as well as how you cook the bacon. I myself flip bacon a lot so I know how each strip develops the color and crispiness of fully cooked bacon. It is good we who watched you are not able to take in the tantalizing aroma of bacon.

Great video as always Mike! I'm a original or smokey flavor bacon 🥓 person too. Have 10 lb of homemade bacon that's been dry brining all week. Gonna smoke tomorrow with either hickory or apple wood. Done years ago and turned out awesome. Take care brother and have an awesome weekend.

Big Cat I enjoyed this segment. I would say the anybody if you don't like bacon is something wrong with you you know how the world is coming. Now since I'm a Country Boy I'm used to slab bacon but by commercial bacon I've learned that you have to look at the back with a slot set to see your fat to meat ratio! Because it looks like they are giving you in the rest of the bacon more fat than they giving you lean meat in it specialized Bacon's you get the more meat so start looking on the back of the bacon packages for the for slit so you can look at and see what you get

Good video Mike. I always liked original flavor until I came across wright bacon thick sweet barbecue flavored bacon that was smoked. You have to time it right to get it. They do a few specialty flavors once in awhile.

Sorry; but the best bacon out there-is slab bacon, rind on, prepared two ways: 1) Smoked 2) Simmered with and while preparing headcheese trimmings (jowls only). Both can be carved right off and eaten, slow-fried up, or the headcheese-prepped version (from the jowls) is rolled in Hungarian paprika, sliced and enjoying with artisan bread. The smoke version can be cut into 4” chunks, placed on a hardy skewer and roasted over an open fire (turning often to prevent burning). A delicacy of a hunter’s camp breakfast when served with fresh tomato, onion and green peppers on sourdough bread-saturated with the drippings periodically dabbed while roasting the bacon….
