In my world, dunnage refers to the wooden planks that are packed around the freight (on a ship or truck) to shore them up for travel, or to keep them from shifting while underway. Dunnage is generally considered the wood that heats a longshoreman's house in the winter...

I'm really enjoying these "behind the scenes" looks at the distillery. When I visited Maker's Mark in December 2016 I noticed that their new warehouse is partially underground. It reminds me of the wine caves in the Napa Valley.

I went and did the tour at Jack Daniel's in Lynchburg TN. Really cool place. 89 barrelhouses(with more being built) each holding 1 million gallons, spread out thru 2000 acres in the Tn mountains.

I live vicariously through this channel. I wish I could be living your dream. One thing I have always wanted to try with aging whiskey is the smooth jazz approach, essentially play your barrels some smooth jazz 24/7 in the hopes that the vibrations from the music will help to let the spirit breathe in the barrel. For you though I think a running loop of your youtube soundtrack would be more appropriate especially that opener ooh we bop and zippity hop, lots and lots of that one. I hope one day I can make the pilgrimage to the house that Daniel built (and Rex mooched), till then if you're ever in San Diego give me a hollar and I'll buy you a round or two.

I've always been very interested into what would happen if people aged in the More marshy regions of Minnesota in the middle of the state cuz we have crazy fluctuations in temperature and humidity year round.

Think you guys could appropriate a cave and stick a few barrels in there? A constant 56F temperature in the dinginess of a cave could really change how the whiskey ages, especially if it only spends part of its time there. Don't know the Texas cave system too well, but it could be a fun experiment for someone like yourself or Balcones. Granted, Kentucky and Missouri have some of the most expansive cave systems. Maybe a couple distilleries from those places could have a little fun with the caves there?

100% accurate about how climate works in Canada. West is warmer than east. But we have weird pockets too like cape Breton nova Scotia being warmer than the rest of the East coast.

Yeah, I live 8n Austin, we are on the Edwards escarpment. Solid limestone once you hit 6-18 inches below the surface. One of the most expensive places to build an in-ground pool and nobody has a basement here.

In very curious about the legality of selling the 1792 from the fallen warehouse. As I understand it, since whiskey is considered a food item, you have to have constant accountability for it, and who knows what happened when it fell, so idk if they're gonna be allowed to sell the whiskey.
