I fermented strawberry and watermelon together and the final product, after distillation and proofing down to 80, had a unique character. It tasted like a strawberry jolly rancher at first, then morphed quickly to tasting like the watermelon jolly rancher. The ladies really loved it, but I had to warn them that, because of the proof, it would sneak up on them, lol

A suggestion: When you’re proofing down your spirit, dilute it with the (unfermented) watermelon juice, instead of with plain water. That would make the end product taste more like watermelon.

I do a watermelon brandy every year......a 10 gallon wash but I press the watermelon flesh, add about the same amount of water and add sugar. Obviously to the whole fermentation thing and I run it thru a copper column comes out delicious!!!!

In my youth me and my brother used to make watermelon wine with an airlock right in the rind. We would push a 1/2" conduit in one end and pull out the core sample and up end the melon into a bowl to drain for 30-60 minutes. Take the juice that drained and add a 1/2 cup sugar and yeast then pour it back into the shell and add an airlock. When it stopped bubbling it was ready. Chill and serve. Great party favor for 13-16 year olds and nobody knew a thing.

I want to see you guys try to make alcohol out of condiments. Ketchup, mustard, soy sauce, etc. There's a ton of sugars in there but you might have to get 'organic' or something like that so it doesn't have preservatives in it.
