Of course, using "native yeast" or "wild yeast" can be problematic if you don't know the nature of what is in your area. Sometimes native yeast can result in a stuck fermentation in which it fails to completely convert the sugar to alcohol. The mash then needs to be quickly inoculated with a more aggressive yeast (such as Saccharomyces cerevisiae) to complete the task. But, some argue that using native yeast gives a whisky (or wine) a better sense or provenance or terroir.

Using native yeast for natural fermentation seems hard but can be done. Rum distilleries from Barbados and Jamaica do it. Fermentation in Jamaica lasts from 1 to 2 weeks.

Arran has a great line of NAS finished Scotches. Though they don't have age statement, I believe they are all around 10 or 12 years old. Arran takes their base spirit (which is 10 years old, 50/50 ex-Bourbon and Oloroso Sherry) and then they finish them in a variety of casks. The Amarone is one of my favourites, but I don't think I've ever had anything from Arran that I didn't at least enjoy while I was drinking it :-)

I was going to say pretty much the same thing. I think all you have to do I create an environment that is preferable to the type of yeast you want to attract. Then cultivate it until it's large enough and active.

I found a bar in Huntsville, AL that has a great selection and offer tasting flights. Last week I tried a few Japanese whiskeys. (Hakushu single malt 12, super) They have a Glenmorangie flight on the menu. That may be my next order there. Thanks guys.

In terms of the making process, what is the difference between age statement and no age statement whiskys? Does it mean that with no age statement they dont age it any longer than they have too? or does it mean it is a mixed batch of the same whisky of different ages to create a particular taste? Thank you in advance for the answer, I am a massive fan of the show and I love to learn more. I find it hard to discover different whiskys as I am only 20 and none of my friends are into this at all haha

Hey, so age statement means, that there is no whisky younger then that age in the bottle. There may be older, just not younger. Non age statement gives the ditillery the freedom to use what ever age they want (at least 3 years in Scotland) to creat their expression. This also means, that two bottles from the same expression may not have the same blend of ages in them. I hope I could help

@@WhiskeyVault Since we are bringing up distillery stories, Glendronach's founder James Allerdice was having trouble selling his whisky back in 1826 so he decided to pop into a brothel to cheer himself up and paid the ladies with his unsold whisky. The ladies promptly served the Glendronach to their clients who began asking for more whisky. So Glendronach unintentionally had prostitutes selling their whisky! And I doubt that will ever be mentioned on the distillery tour.

Hey guys! Love the channel and love you guys. Just tried a glass of Talisker 10 last night (for only $10!) and really enjoyed it. In my mind, I thought it was a more refined, perhaps even better, version of Lagavulin 8. The brininess and seashore salt seemed more even and the peat was not overpowering but consistent throughout. Do you think it's right to compare the two?

You collect yeast by leaving a an open container of solution high in sugars out for a while. You don't just scrape it off a rock or something in the woods. It's the same way a sourdough starter is made.

Rex, you're not far off from the truth of how you would culture wild yeast. You do that then you have tons of different growths in your dish and then you take a sample off of the colonies individually and then grow that on another plate to get it to be a pure culture.

You don't store liquor on the side. The higher alcohol will degrade the cork. If you plan on having a sealed bottle in your collection for a long time it's a good idea to just turn the bottle a few times a year just to add a touch of moisture to it.
