Thank you for this really awesome recipe. Just made it and the whole fam was pleased. 13 minutes in the oven and they were big, chewy, a tiny bit crisp on the edges and had the perfect sweetness! The same dough was used to make delicious small crispy ones, took the same time too :-) With thanks from Singapore.

what's the difference using dark, light brown ot white sugar makes in the final result?

Dark brown sugar has a high amount of molasses in it which works great for gingersnaps, gingerbread anything with lots of spices in it but all that liquid molasses keeps cookies ultra soft. And makes them a very dark brown with an almost a bread-like consistency with a strong molasses taste. White sugar provides sweetness but they make rock hard cookies because there is no liquid in white sugar. Perfect for crunchy cookies. But all white sugar does is provide sweetness. Light brown sugar takes the best of both worlds and combines them. It makes cookies soft but without a strong molasses taste but also provides some sweetness without being straight sugar. It's a much more mild sweetness. And because of that, most all cookies have a combination of both white and light brown sugar...because they want them sweet, somewhat soft but not dark and without a strong molasses taste and smell. So if you want hard, crunchy and overly sweet cookies you use all white sugar (like sugar cookies). If you want dark brown cookies that all you can taste is molasses, you use dark brown sugar (like gingersnaps). If you want anything in between you use a combination of white and light brown sugar.

Brown sugar provides most of the flavor and softness of the cookies. If you didn't need it, it wouldn't be in the recipe. Baking is an exact science. Get all the ingredients a recipe calls for or else you'll just end up disappointed and be out the time and ingredients you wasted.

No, butter will be hard if it isn't room temp, so you need the butter to be soft. The eggs are liquid mostly, so you can just toss them in.

cris paz I buy mine from Aldi. It's cheap but it's the best I've found. All their chocolate is the best. It's so smooth and silky and not overly sweet. I'm a convert! I won't buy chocolate from anywhere else again.

The recipe calls for baking powder, not baking soda. They are two different ingredients and is probably why your cookies turned out cakey. Try again using baking powder and you should have better luck.

This is my favourite cookie. I will have no choice but to make it. Could you please verify an ingredient for me, please? Is it baking powder or baking soda? The ingredient list in the video shows 'baking powder' and it is also what you mentioned in the video.
