White curry is a white-ish gravy curry with a subdued spice color and has a creamy, spicy flavor.
It was born in Hokkaido in 1998, and became a nationwide trend in 2006.
Cream and butter are used to create the creamy flavor and color in non-veg recipes, but this is my vegan version.
There are numerous recipes, as there are no set rules for flavor or ingredients.
The only commonality is that the gravy is finished white-ish.
The trick is to not use turmeric and to use less powdered spices and more whole spices.

Glad you enjoyed the video! These days, it is rare to see it in restaurants in Tokyo, and it seems like it's now a dish enjoyed at home. I hear that restaurants in Hokkaido are serving white curry made with locally sourced seafood.
