You may try draining out the water from cooked lotus, blend with 2-3 pieces of pandan and extract the juice, then add back to cooked lotus and blend, see how is the result.

Are you using normal pan to cook? You may need more oil if not using non-stick pan. Do not reduce the amount of sugar too as it will affect the paste too.

If I am not able to use the paste immediately, how long can I keep it in a sealed container in the fridge or freezer? How do I reheat it when I am ready to make the mooncake? Will you be making a video how to incorporate durian with the lotus seed paste to create a traditional mooncake, not snow skin?

Wrap the filling with cling wrap when completely cooled. Put into airtight container and keep refrigerated. I usually finish using the filling within 4-5 days. To keep longer, you may try to freeze it. If the paste is dry, add in some water and cook over medium-low heat until softened before using. I have try to incorporate durian into mung bean paste, not yet with lotus seed paste. You may try adding 170g -180 g of durian flesh, blend together with the cooked lotus seed and sieve. Reduce sugar to half or to taste. All the mooncake paste fillings are suitable for both traditional and snow skin mooncakes.
