I'm making mooncakes this year! Of course we have the Hong Kong cakes in reserve should it all go wrong. Thank you so much for this recipe, the lotus paste was sold out and I was going to have to get 'creative' but lotus paste is my favorite filing for these! I also made mooncake shower steamers with the press! Love the beautiful designs. Big thumbs up from one Creator to another! 🥮Jen

For the stickiness, with it the paste will be crumbly.

You may try draining out the water from cooked lotus, blend with 2-3 pieces of pandan and extract the juice, then add back to cooked lotus and blend, see how is the result.

You may try adding pandan juice to glutinous rice flour (instead of water).

No sure about fresh seeds, you may try 200g and adjust the sweetness accordingly.

Most of my recipe are already using minimum sugar, reducing further might affect the texture.

MyKitchen101en hello. I followed the same amount. I actually did a 2nd batch and this time took it out of the pan once it reached dough consistency. Could it be the first one, I overcooked and it started weeping? Because I tried to use the first batch, it’s so dry now...

Don't chill the paste, freezing is better, return to room temperature before using. If you chill it, it will become dry.

The texture might be affected if too little sugar is added, you may need to add more oil for a smoother paste.

What is the brand and size [cm? ml?] is the saucepan that is used to cook the lotus seeds? It looks very durable.

The 28-cm frying pan, same as the one for red bean mooncake.

the fry pan is used to dry out the paste. The saucepan is used to cook the seeds. It looks live a stainless steel saucepan

If it is too soft, cook it a little longer, otherwise the mooncake shape will no hold very well.

Are you using normal pan to cook? You may need more oil if not using non-stick pan. Do not reduce the amount of sugar too as it will affect the paste too.

I haven't use pandan extract before, you may try with 1/2 tsp first, add more if not enough.

Hi there After freezing it .. I used it like a week later for steamed buns and returned it to room temperature before using but it becomes very dry and crusty .. how do I make it “sticky” and “flowy” again?

If I am not able to use the paste immediately, how long can I keep it in a sealed container in the fridge or freezer? How do I reheat it when I am ready to make the mooncake? Will you be making a video how to incorporate durian with the lotus seed paste to create a traditional mooncake, not snow skin?

Wrap the filling with cling wrap when completely cooled. Put into airtight container and keep refrigerated. I usually finish using the filling within 4-5 days. To keep longer, you may try to freeze it. If the paste is dry, add in some water and cook over medium-low heat until softened before using. I have try to incorporate durian into mung bean paste, not yet with lotus seed paste. You may try adding 170g -180 g of durian flesh, blend together with the cooked lotus seed and sieve. Reduce sugar to half or to taste. All the mooncake paste fillings are suitable for both traditional and snow skin mooncakes.
