400 g purple sweet potato (diced) 3-4 pcs pandan leaves 110 g fine sugar 1/3 tsp fine salt 1 1/2 tbsps glutinous rice flour 190 g plain water 2 1/2 tbsps (30 g) cooking oil Directions: 1 Steam purple sweet potato with pandan leaves for 20 minutes until very soft. 2 Combine sugar, salt, glutinous rice flour and water. Mash steamed purple sweet potato while still hot, add in, mix until combined, then sieve into a non-stick pan. 3 Add in cooking oil, mix well. 4 Cook over medium heat for 15-16 minutes (the heat for different cooker is different, cooking time is just for reference), until you have a smooth paste. 5 Set aside to cool completely. (Update for storage: Put paste in container and freeze it. Return frozen paste to room temperature before using. )

For homemade mooncake I always keep refrigerated for storage. I will finish in 2 days if left at room temperature. I use to freeze up to 3 months, return to room temperature before serving.

I always keep homemade mooncake refrigerated and serve within 7-10 days, return to room temperature before serving. If kept at room temperature, finish in 2 days. I used to freeze it to keep longer, up to 3 months I kept.

Are you sure it is 190 g plain water? Because my filling is really runny.

The textures for different types of purple sweet potato are different, some are more starchy and some are less. Water helps in blending. If it is more starchy, you will need more water, but will yield more paste. If it is less starchy, you will need less water, but will yield less paste. You purple sweet potato may be less starchy, then don't add all the water during blending, just add may be 140 g-150 g and blend, if it is very sticky, then add more, until you have a smooth blended paste.

Yes, orange sweet potato is usually less starchy, just adjust the water added accordingly.

Vanilla could be okay if you want a flavor relatively close to pandan. I've never tried them, but rose essence and saffron extract might give a flowery aroma. They're all different, but might turn out well too.

You will need a base ingredient for the paste, then add in the other flavour. You may use mung bean or sweet potato as the base. For example, for durian paste, I use mung bean and durian flesh.
