Dad’s basically right! I was shocked to learn how soan papdi is made, but it’s actually a handmade sugar floss candy. Look up some videos to see what I mean! Whereas a cotton candy machine heats & spins the sugar instantly, for soan papdi (and other cultures’ candy flosses) people pull the melted sugar into thousands of strands of superfine candy by hand, using different kinds of flour/oils to keep the strands separated. So they’re not exactly the same as cotton candy, but they used to fill that niche until the 20th century, much like cars vs bicycles.
