The reason, in my opinion, that fries no longer taste as good as they used to is because they are fried in vegetable oil, i.e. seed oils, instead of lard. Or even when vegetable oil came into more wide spread use thirty plus years ago most restaurants would mix beef talo with the vegetable oil. 👍

Yep and growing up I never understood why our buttered toast was soggy and nasty while grandma's was crispy and delicious. My mom used margarine (veg oil) while grandma had butter (animal fat). Makes a huge difference. And just like eggs, we've come full circle and it's the animal fats that are healthier than the seed oils.

Anyone who knows Arby's is aware that there is a world of difference between its regular fries and its curly fries. At the start of the video, it showed Matt praising the curly fries, which are awesome. When you order fries at Arby's, you should only order the curly fries, which are sheer perfection.

I ordered thru the drive thru once and said curly fries, looked in my bag and received the crinkle cut fries. I told the employee I asked for curly and the guy who took my order accused me of asking for crinkle fries. I told him I've never in my life asked for the crinkle cut fries I have never tried them and come to Arby's for curly fries. I don't know why the guy couldn't accept that he just misheard me over the crappy radio.

French fries are good for about 15 minutes before the oil cools and ruins them. Not a great way to judge them all fairly. Also, the reason fries suck now is because everyone is moving away from beef tallow and to vegetable oil. Animal fat is a must for a quality fry.

I believe there's a huge difference between Arby's crinkle cut and Arby's curly fries. In fact, I think a lot of crinkle-cut fries are sub-par at best. The worst I ever had was 5 Guys. It was like they microwaved some generic-brand freezer fries. Culver's while having amazing burgers, has some bland fries. But if you get them at just the right time, they have a nice crisp texture on the outside with a mashed potato-fluffiness on the inside. Perhaps the decline of fries has to do with the seed oils they use. They can pretty good if you get them right out of the fryer, but that stuff goes rancid so fast. McDonald's can be pretty good, it's a gamble. Even the Arby's curly fries, which can be very good, often have a strange astringent taste.

I love Arby's fries, both the crinkle cut and the curly fries, but like every other fast-food place, it depends on how long the fries are in the grease and the temperature of the oil. It also depends on who is preparing them. There are workers who know how to cook them and there are others who don't care at all.

McDonald's pre-2000 fries were the ultimate fries. No competition. Period. That was before they switched from cooking them in healthy beef tallow to t o x i c RBD seed oils that they use today.

It's partly the fault of a millionaire named Phil Sokolof (and his misinformed doctor) who suffered a heart attack and then proceeded to wage a crusade against saturated fat, which the fast food industry vowed down to. He and those that supported this jnnk science are personally responsible for the sickness and daeths of untold millions of people.

They made fries for other restaurants too, but the McDonald's fries were special and had to be done completely seperately. Part of the reason for this is the water they used to blanche them had beef both in it. Right from the beginning McDonald's fries were different and better than regular fries.

To be fair, the quality of the fry is highly dependent upon the person in the kitchen. Undercooking is definitely a problem lately, and will make even the best fries seem like vomitous tripe. I do agree that, when cooked properly, Arby's curly fries are some of the best you can get of the fast food variety. I don't recall trying the crinkle fries...I generally don't like crinkle fries, as they have a tendency to be too limp for my preferences.

@@nisonatic Yeah, I'm sure they try to make it as simple as possible. Could be that the oil isn't quite hot enough, or too many raw fries are added at once, which drops the oil temperature. It could be differences in batches from the manufacturer. Perhaps they don't remove as much of the moisture from the potatoes before packaging and shipping them, so they're a bit too damp when dumped in the fryer. Maybe the potatoes themselves are from a different region and have a slightly different composition, more/less starch than other potatoes, etc. There could be multiple factors that contribute, but certainly we all can agree that limp, soggy fries are not ideal. (Unless there are some certifiable maniacs out there who like mushy fries. Yuck!)

Wendy's had those natural edge french fries for a while (I haven't eaten fast food in years) and they were some of the best fries in my opinion. The problem was depending on which Wendy's you went to they could be great or not so great.

Recently I had Arby's in Istanbul. Best fries i had in a while! They were wavy and seasoned, but unfortunately those were just warm, but so good to offset that slight inconvenient. And the roast beef sandwich was way ahead of any burger I had for some time.

Agree about McDonald's. I loved the taste when I was younger but they taste like cardboard now. I work for a foodservice distribution company and I know they've been trying to go "healthier" with the frying oils and I believe that's why the taste has been going downhill. The reason french fries across the board have gotten worse is because everyone replaced "unhealthy" beef and pig fat with "healthy" industrial lubricants like soybean and canola oil to deep fry them in. Obviously those aren't healthier, but they save a lot of money using these seed oils.

The reason french fries are no longer edible is because they used to be cooked twice, which is the number one rule when you're making french fries. If you cook them only once then you get what you got. And if you freeze them first you're asking for it.

Sometimes they give you the ones that have been sitting their for an hour, sometimes the highschool student part timer doesn't care enough to remember to salt them, and sometimes you go to McDonald's and it's just crap and the nuggets give you food poisoning too so you really don't know what you were expecting. At the end of the day we all know that Arby's curly fries are where the 100/100 fries are at. I barely remembered that Arby's had other fries because the curly fries are just that good.
