I watch you because you remind me so much of my mother and childhood, your videos warm my heart. My mother has passed away many years now , but watching you grate the coconut and squeeze out the milk warmed my heart. I could smell all the delicious aromas that filled our kitchen. When I cook I use canned coconut but next meal in my rice and peas I'm using fresh coconut. Thank you for reminding ding me of all the love and wonderful cooking.

I’ve seen others cook so call run down. First of all they didn’t cook the coconut milk long enough to produce the most important custard. Yes it will taste of coconut but it’s not run down if there’s no custard; just call it mackerel in coconut milk. Aunty Pauline, I am still waiting for your pepper seeds to plant, please !!

Mi love this lady, Mi learn something from her, i never cook the mackerel in it, mi grow up cooking the mackerel separately and put it in when it halfway/cut oil. and my hands itches if mi wash yam cocoa, she is the real deal, no fake and for that rearming proscribed to her channel. mi could demolish some now but it is missing some ripe pear/avocado 😂. am in the Uk and we got avocado right through the year and me eat every day. stay blessed 🙏👍👍

Read the label on the canned coconut milk and you will see that there is a long list of ingredients, including starches and stabilizers. The powdered one has even more ingredients, including cow's milk powder. There is no substitute for fresh and the results are very different.

Guar gum only cause mild digestive symptoms if consume too much . The amount added in food is not bad. Just becarful with these tin foods read the label.

I only use the canned coconut milk or the dry coconut powder. I also use the brick coconut. I don’t have time to grade coconut unless I’m doing cornmeal or potato pudding. Can you please make cornmeal pudding.. that’s my husband’s favorite dessert. I would love to see how you do it!

The real coconut curdled and separated from the oil. The tinned milk seemed like it's pasteurised so that there's no separation but it would thicken up if boiled for longer.
