Hey, Lulu. I buy fresh green onions and plant them. They don't grow larger, but I always have the green tops to cut off some when I need onion in something. They regrow more green tops

@@evettabush3435yes, that is a great tip. I do that as well, but I slice the green onions, and leave about 1 1/2 inches of the root end. Then I just plant those in a pot. I do the same with the bottom of Romaine, and I harvest the leaves as they grow.

If you heat the sauce , leave the zuchini noodles just fresh, the heat from the sauce will take care of the zucchini

I make spiralized zucchini often and I drizzle olive oil in my skillet and toss in the spiralized zucchini tossing briefly and it’s still slightly crunchy. DELISH!

I enjoy spiralized zucchini often. After spiralizing, I put the zoodles in a collander over a bowl and toss them in a little bit of salt - about 1/2 teaspoon for 4-5 zucchini. I cover that with a plate and let it sit at room temp for 30 minutes to drain. Love this raw or heated briefly - a minute or so - in sauce. Keeps well several days.

Love zoodles!! I just have the little rake but it works great. Hold it with a fork and drag the sharp zoodle rake over the zucchini. Your gadget looks fantastic! I was inspired by one of your soups and made some today! I added HB egg and chicken tenderloin. Turned about delish. Keepin it fresh and lean. 💃🏻🙏🏼

What a great recipe, Lulu! I love italian food... and Greek food... and Indian food... and Chinese food, etc., etc. I've also taken to substituting a vegetable like zucchini or spaghetti squash for pasta. I don't know why your channel popped up on my feed but it did and I've been following along for a couple weeks. I had my blood tested recently and got a call from the doc's office that I need to go in to have a talk because it seems my blood sugar and cholesteryl are high. Uh, oh. It really made me stop and take a look at what I'm eating and realized I need to make some changes, stat! So, I've been following your meal plan, more or less, I can't quite manage the volume of veg but that's okay. It's made me realize how much processed food, hidden sugars and way too much dessert, I was consuming. I've only been doing it for about a week and getting into the swing of it, I've lost a little weight and I feel better knowing I'm doing better. Hopefully the talk with doc will be that I just need to change my diet and I'm ahead of it. Thanks for sharing all your wonderful meals. It really is amazing what you can do with whole foods...and they are, in Lulu's words...delish!

For zucchini noodles I just lay them out on paper towels and add salt to draw out the water content and rinse and drain lay on paper towels again to dry then ready to add all other things. That’s my way hope it helps you to see if that works for you your dish looked amazing.😃

Looks good. I had a neighbor who had a Fig Tree for years, until one nasty, windy thunderstorm took it out. They were so good. He always made sure i had some, when they were ripe. The trees are very delicate. Thank you for giving me many laughs and giggles. Pasta: Trial and error-shit happens. That looks really good. Great cook!

Suggestion: Just use the zucchini pasta raw and heat up the tomato sauce with some of those spices instead. You can eat zucchini raw. Also, plant arugula in your garden. It grows like a weed and needs no special attention. Love your singing 😊

I learned the hard way to not cook the zoodles. It does remove or cook the water out, making them soggy. What I do is either microwave just enough to warm them and then add the sauce. Or use the toaster oven or the air fryer to just crisp them up. They are better when they retain their moisture.(IMO),, jo

I have a hand held spiralizer, which works well and doesn't take up kitchen space. I would toss the middles and and ends into your salad. I enjoyed your video and watched it while I had my measured lunch!! We had lunch together!!! lol thanks for another wonderful video.

Hi, Lulu, I (kind of) 'met' you at the right time… I’m diagnosed with Diabetes and really struggling with losing weight. We’ve a small garden (2 big fig trees!! ), are vegetarians with a very small amount of fresh caught fish, I avoid sweets… I’ve no clue why this hit me. Maybe bread and I should avoid ALL sweets. Although I’m only a bit overweight my doctor advised me to lose weight. But that doesn’t happen. It’s not a lack of information, I know everything about weight watchers and other ways, but this weight seems almost glued to me. I’ll try your simple but tasty way of preparing food. I’m mostly attracted by your powerful and happy radiance… thanks for sharing. I fooled myself into thinking I eat plant base and clean. Yet, before I started this meal plan I did add things I shouldn't have. Creamer for tea, treats when my daughter bought them, honey on my cereal etc. And of course bread, even though I ate Dave's Bread it added too many carbs. Yes, for a whole month follow Lulu's meal plan and weigh your self after that.

Im pleased you posted the video, you know sometimes "fails" are good! Thats real life!! Im surprised how many carbs you eat, patatoes, sweet potatoes and rice. I guess it balances out the meal more...Im very aware that carbs convert to sugar. Purhaps if i ate more carbs I wouldnt crave sugar so much!!! And they do say woman in there 60's do need carbs!

I have a carb with each of my three meals, every day. but the majority of my meal is veggies. it's not carbs that are our enemy, it's too many carbs and the wrong kind. stick with limited amounts and be sure they are complex carbs, not simple carbs!! 😊

Hi Lulu…that meal looked so yummy. I agree with you on the little golden potatoes. They are the best! I’ve even started using them in my stews or when I do a roast with potatoes and carrots, I use the little golden potatoes…..they don’t get overcooked or mushy how the russets do. I usually don’t even cut them in half. When I was younger, a cousin of mine had a pressure cooker explode on him! We were at our annual family reunion in PA….anyway, he was making corn chowder in the pressure cooker. Thankfully there was a swimming pool behind him. He climbed that fence around the pool so fast and jumped in. The doctors told him if he hadn’t of done that, his burns and blisters would have been much worse. Of course he didn’t have a shirt on (Labor Day weekend, so still quite warm). Ever since then, I am so leary of pressure cookers/instapots. I cringe whenever I see people using them. By the way, he was using it correctly….

the pressure cookers from back in the day are different than the instant pot. I remember my mother's pressure cooker exploding one day. I don't think that happens with the Instant Pot. with any pressure in the pot, it's impossible for the cover to come off!!

Hi Lulu, what a great idea to use the canned sauce right on the zucchini. Next time you do noodles warm them in a fry pan it takes 2 or 3 minutes. I usually put them on some paper towels to rest and release the extra moisture, they are amazing that way. How is the string bean harvest this year? I keep waiting to see piles of string bean as a veggie side in your cooking videos. Hope to see you before your trip out west. ❤

hello Chuck!! I've been to W a few times and haven't seen you there. it turns out that the lack of weeding completely smothered everything and took over. I got a very very small harvest of green beans. I think next summer I'm going to stick around and have a well maintained veggie garden again!! this summer I just felt like not having the responsibility. but I'll be doing enough traveling between now and spring, that I will just settle into home here and garden again!! YAY!!!

Lulu, are you doing intermittent fasting as well? when do you have your 1st and your last meal of the day? I am so inspired by your lifestyle.

hi Corina!! no, I do not do intermittent fasting. I eat breakfast around 6-7am, lunch at noon, dinner at 5:00. I do realize that fasting has its benefits but that brings me back to my starving-myself days and there is absolutely no reason for me to go there. just three meals a day, never a bite of anything in between, I'm hungry for each meal because I'm not grazing. and I maintain my weight just wonderfully and peaceably! 😊

Oh, that looks so good! I have zucchini and chicken a lot and I love them both. Being Irish, it goes without saying that those little yellow potatoes are always a win with me! Good job, Lulu!

I know you are supposed to put water in the instant pot. But, since zucchini is so watery itself, maybe you don’t need to add the extra water? Or, you could add the water but put a strainer in the bottom of the pot so the moisture in the zucchini would drip off and the zucchini would not sit in the water.
