Hi Mark. Thank you for this good video! I am in between the Rocket Appartamento and the more expensive PID Giotto, Mozza V. I have a limited budget and wonder if you know whether the PID Giotto would make much difference over the pressurstat Appartamento on the quality of brewed cofee. Please, note I'm comming from a Breville Barista Express. Thank you!

Hey E, Congrats on the move up from the BBE! PID will make a difference in 2 ways. First oin most cases there will be no need to do a cooling flush prior to pulling a shot. Almost always have to do one when using HX machine controlled by pressurestat. Second, You will have more consistency in brew temp with PID machine. You can get there with non-PID machine but involves a bit of guesswork and practice. Marc

Hey again I just commented on another video and wish I remembered to put it in that comment. I have adjusted my sirai pressurestat from 1bar all the way up to the pressure relief valve kicking in then backed it off until it stopped venting my problem is I noticed no matter how high I had the pressure set I would never get super heated, steamy water coming out from the group. Could this mean I need to ether replace or rebuild with a sirai rebuild kit. I sometimes like to have a slightly lighter roast coffee and would love to be able to dial the temperature in using the sirai pstat when I'm drinking that lighter roast a couple times a year. Again thanks if you reply I always appreciate your help and insight

Hi Sam, I'm not familiar with the make/model machine you mentioned in your other post. Honestly surprising you were able to make the safety valve go and not get overheated water at the group. Hard to say on the rebuild. I your other comment it sounded like your machine was cycling temp so it's likey functioning normally. Marc

Thanks, for sharing that insight. My machine struggles, to texture a 2 cup jug of milk, by the time I've finished the milk it's down to 1/2 a bar of pressure. I hope adjusting the pressure stat it might offset this. I may just adjust by 1 turn & see the impact it makes on the milk.

Hi YANJ, With the PID no need for the pressurestat. PID controls a static relay - so much tighter temp range in the boiler.

Question? If your machine does not have a gauge how would you adjust it! Mine has considerable steam when on and not in use?

Hi MD, What machine do you have? If everything is working well - your espresso is extracting nice and you have good steam power then probably no reason to adjust boiler pressure/temp. Lacking a gauge, you could do some trial and error adjustments. So let's say your espresso generally comes out on the sour side. That typically indicates a low brew temp. So try adjusting the pressure stat so your boiler runs a little hotter. Pull some shots and if they are generally less sour then your adjustment helps. Now, if your machine has a heat exchange boiler you can accomplish the same thing - raising the brew temp by using a shorter cooling flush prior to your extraction.

Nice machine! So it is a heat exchange boiler. If you are happy with steam pressure and espresso you're making I see no need to adjust the pressure stat. If you want to adjust steam pressure higher or lower you can adjust the pressure stat. Understand that will affect your brew temperature. You can compensate for higher or lower water temperature by lengthening or shortening the flush prior to pulling espresso. Hope that helps. Hello, My Rocket espresso Mozzafiato Evo R, does not have the Sirai inside, but I have exactly the same problem, How could I adjust it beside turning up the temperature on the below deck? THANKS

Hi MB, No pressurestat in the EVO R - you have it better with the PID temp control behind the drip tray. Changing the set temp there will increase/decrease boiler pressure. Be aware changing the PID set temp will change your brew temp. Consult the chart in your machine's manual to find out what your brew temp will be based on your PID temp setting. Hi MW, Can it be done? Well, anything is possible. I would not recommend it. Need to get a temp probe into the boiler. Also, very difficult to balance the temp in the HX boiler to get a consistent brew temp. You'd likely still need to do cooling flush prior to brewing.

Hi Paul, If I understand correctly it sounds like your vacuum relief valve is not closing completely when the machine gets up to temp. Although by your description it could also be the safety valve venting excess pressure if a pressurestat has failed or is adjusted too high and your machine is heating too much. If it's the vacuum relief they can be cleaned or replaced. Here's a video showing how to do that on the ECM Synchronika. Am I the only one that freaked out when he dropped the screwdriver on to the exposed wiring while trying to adjust the pressure stat. If I’d done that I can guarantee I’d have welded the screwdriver to something or blown a circuit breaker in the house :)

Does the steam from brew head mean it's too hot so need to flush? I always get steam but when I measure temp as water comes out, it's around 82C degrees (kzbin.info/www/bejne/enPUaKB4is5le6s). Usually I get sour espresso from medium roasted beans, I believe it hasn't reached right brew temp. Thinking of increasing pressure from 1.2 to 1.3

Hi f, Thanks for the question. Yes, initial abundant steam indicates flash boiling and over-heated brew water. Unless using a Scace device to measure temp it's very difficult to measure brew temp accurately. Marc
