Oh I love banana cake/ bread. All through the year I saved my overwrite bananas and freeze them. Then at Christmas, I bake with them. They are pretty dark by the time they thaw from being frozen. Thank you for showing that cooking and baking can be done easily !!!

This has come at the right time. My son loves banana cake but the dietician at the hospital has told him as he has cancer he needs to cut back on gluten. Apparently gluten in the diet is not good for cancer so reduce it. Grandson gluten intolerant so sent it to my daughter too. Win win. No gluten in this. 🎉🥳. Well done Rik

I made a version yesterday. I can't have bananas so I used apple sauce and added diced apple and walnuts. The Better Half loved it. Thank you for this recipe. I very much appreciate that you took the time and care to put the amount of banana in grams so it was easy to substitute. Things like that make a big difference. In case anyone is plant-based and/or low oil: flax eggs worked fine and I replaced half of the oil with extra apple sauce. It was a little denser but quite tender and tasty. It also took a bit longer to bake but use a skewer to test and you'll be fine. Oh, and I used steel cut oats for the flour. It only took an extra minute to blitz. I love oats so I'll be making this often. It's a more healthful treat that I feel good about giving to my dear one.

Hi Rik, made this today! Very, very good! I had to leave it in the oven 15 minutes longer than stated. Maybe because, while a was whipping up the batter, I had a phone call and I had to leave the house so the batter was left alone for a couple of hours before I could put it in the oven. But it was delicious!!!! Thanks!

When my mom used to make it she used to leave it to go cold, then wrap it up and put in a tin for a couple of days to cause it to go sticky. Been years since I had one, but I don’t have a recipe and sadly, mom’s not around anymore. I can remember her putting the dates in a mixture of sodium bicarbonate for a time, to soften up, but cannot remember anything else….

Love banana bread , and make it often,as for some reason they only seem to sell bunches of 8 bananas here, so as I only like to eat bananas that have lots of brown spots on them, I usually end up with 4 over ripe ones,which I freeze so I have an endless supply of bananas for bread,I like lots of raisins, and nuts in mine, also I like yogurt,I like cakes stodgy, a bit pudding like, but I never butter my cake/ breads, that’s very English of you, and I am out of that habit, after 60 years. 😊

I started to make this with two bananas so I reduced the ingredients to 2/3. Then somehow I forgot and started halving them. Then I remembered so poured in a bit more oil sugar - in fact everything except the oats😮 And guess what it is absolutely delicious I could eat the whole cake😂😂😂

My wife insists on buying fruit, because we ought to eat fruit, then we don't eat the fruit and it starts to attract fruit flies (which pisses me off no end), or it ends up in the compost (and I find food waste abhorrent, bordering on obscene).
