@MrTaylork13 ай бұрын
It’s almost like like he said that in the video
@ryanc4733 ай бұрын
@@staytrippy4577 you can make your own with whatever cheese you want (and it's not as processed as you may think). It's literally just shred cheese (don't get preshredded cheese as the anti-caking agents will clump and give a sawdust texture to the final product), boil water, add sodium citrate (which may sound like a scary chemical but it's literally found naturally in citrus fruits), then use an immersion blender to blend the shredded cheese into the simmering water. If you want queso instead of American cheese, use less cheese (and maybe add some peppers/pepper powder). If you want American cheese, completely saturate the water/sodium citrate with all the shredded cheese up possibly can blend in. Then refrigerate in a block mold, cut with either a knife or if you have one a cheese slicer (looks like a hacksaw), and viola, you've got homemade American cheese slices. And if you're keeping track, it's essentially just regular cheese, water, citrus fruit extract/concentrate, and, well, that's literally it. Store-bought American cheese often includes another stabilizer that's a bit "scarier," sodium hexametaphosphate, which, yeah, scary chemical name, but still generally considered safe (unless you have chronic kidney disease or other diseases that prevent your body from being able to properly handle phosphorus). It isn't really needed if you make your own, but does make it a bit less melty at room temperature. Oh, and just so that that phosphorus thing doesn't scare you if you don't have CKD or any other phosphorus/calcium dysregulation issues, baking powder is similarly scary in those cases as that scary sodium hexametaphosphate that's in the cheese. Why? Because baking powder contains monocalcium phosphate, which is safe for pretty much everyone unless they need to actually watch their phosphorus intake Edit: and just to be clear, there's actually nothing worse about the American cheese than the base cheese, except for the higher sodium and phosphorus content (both of which a healthy person can process without issue)
@staytrippy45773 ай бұрын
@@ryanc473 and saturated fats and trans fats and preservatives American cheese is definitely more unhealthy but I’m not complaining
@ryanc4733 ай бұрын
@@staytrippy4577 not beyond the original cheese though, that's the thing (for the trans fat and saturated fat). Seriously, don't believe this random internet person, either make it yourself (just Google American cheese recipe) or, if you want the more processed form, look up NileRed American Cheese (as he literally makes his own). Also, if I had to guess, just given the chemistry involved, American cheese should have lower saturated/trans fat (by weight/volume/serving) than the base cheese counterpart. Why, you ask? Simple, because American cheese is literally just diluted and emulsified cheese. The dilution comes from the added water it's emulsified into, and because no fats are added during the process, by logical necessity it must be lower in saturated/trans fat than the base cheese. Will also note that the trans fat level of essentially any cheese (American or otherwise) is more or less negligible, but don't take my word for that, just look at literally any cheese's nutrition label lol

The perfect grilled cheese(imo): 1. Butter both sides of the bread. 2. Start with a cool pan, start to toast side 1 of bother bread slices. When they toast, move to a new pan, cool, and assemble the grilled cheese with untoasted sides out. Let other pan cool. When side the first side of the assembled grilled cheese is toasty goodness, move to the cool pan and flip, and toast. Perfect inside, toasty all around.

I cooked about a million of these when I was in college - professionally. Kris is very close to restaurant quality. Trick for a great grilled cheese is to toast the bread, turn it and sprinkle the cheese over it in the pan. You'll get a bunch on the pan and that's the trick. Once it starts getting melted, pop it under the broiler for a few minutes. Then the cheese in the pan gets baked to the bread and gets a super crisp crust to it, and it's amazing. I think Fontina makes that amazing pull apart food porn grilled cheese and tastes great. Butter the pan, add some fine chopped chives and a bit of carmaliezed onion to your chees mix, and add a little white truffle oil in that pan with the butter, and it's Michellen level grilled cheese

I would use either bread, Caleb's seasoned butter (on the outside) and cheap american cheese (it makes the best grilled cheese), then I'd add Kris' plain butter (on the inside) and sharp cheese thinly sliced...pepperoni optional cus it's really good on the grilled cheese. Brie works great on grilled cheese but is better paired with things like mushrooms or tomatoes. And this was such a fun video. I enjoyed watching it! Kris' probably would have won if it had less cheese on it. The ratio was off. We use Mayo only when there is no butter available. It works, but butter is better.

If you're gonna use mayo AND butter, put the butter on the outside and the mayo on the inside...also, little life hack for you, if you run out of butter or margarine (though butter is infinitely better tasting than margarine when grilling), you CAN use mayonaise instead to grill your bread.If you don't like the taste of mayo, or have an issue with like eggs or something, you can also use any kind of cooking oil, just make sure you use it sparingly as a little goes a long way and you don't want soggy bread. I have been making grilled cheese sammys for over 20 years and I've been told my grilled cheese sandwiches are the best they've ever had...so not to toot my own horn or anything, but I think that my advice is sound to you guys and anyone reading this. Make sure you cook them on medium high heat, and in order to not burn them make sure that as soon as you can get the spatula under the bread without it sticking, like it comes off immediately that is the prime time to flip it...and only one flip and cook about 3-5 minutes each side. I also usually don't put the top slice of bread on to the grilling slice until the cheese has melted some, so you know it's gonna stick when you flip it. Usually by the time the cheese has started to melt then it is almost ready to flip.
@dakkarblack91944 ай бұрын
You can use Mayo as a replacement for butter, so you'd place that on that outside, not inside. (the grilled part). I see nothing wrong with lots of cheese, though I probably would have stuck to just the cheddar but I don't know if you had to use every ingredient you picked. But anything is better than plastic cheese slices. lol Sorry Caled, I vote for Kris'
