They say yeast and soda. Baking soda is the cause of that hole, yeast only be there to help it react. Because baking soda need something sour, milk or egg to have a kicked reaction. But the company will keep telling you this "yeast and fermentation secret" so nobody can't recreate perfect crumpets. Just rest the dogh a few hours and add baking soda 15 minutes before cooking, it's always create nice holes for me, no yeast, only water, flour and sugar.

Here in the USA we don’t make our own crumpets but buy a ready-made approximation full of preservatives, with expiration dates long into the future. They’re called English muffins and are probably rather like the factory crumpets presented here: I don’t know how close the resemblance is because I’ve never had them on visits to England.
