A lot of people didn't consider the preparation hours required before operation hours. Example, operation hours 12pm-2pm. But did you know that they do need preparation before operation(cooking of soups,sauces,gravies, slicing of veggies and meats,). Operation hours is only 2 hours,but preparation hours could be 5-7 hours. Some hawkers travel to a wholesale market to buy ingredients everyday. So if you include travelling to and fro wholesale market to buy ingredients, total working hours could be 12 hours(excluding closing,accounting and counting daily sales, calling/sms suppliers one by one for tomorrow supply). I think there was a point in time where the govt stopped building hawker centres, especially in the HDB estates that were built in the 90s-early 2000s, so the only options available there were the Coffee Shops, which usually are not cheap cause they impose higher rentals or have policies like taking a share of a stall's revenue. Estates like Punggol, Sengkang, Bukit Panjang didn't have hawker centres till recently. To give govt credit they are building more now, but some areas really still lack them currently.

My dad works as a fruit seller in a hawker center. Ive helped out since a young age. As a woman, and not having the best physical health, it doesnt make sense for me to take up the business. I am also a business woman with my own shop. Hearing my dad's customer flow these days, it has dropped 70% compared to 10 years ago. Its not a sustainable job. Not only that, since only locals can be hired, no young and strong singaporeans want to work in a fruit stall. Its extremely hard for my dad to hire capable staffs

For some people who commented that why hawkera are running only half a day, think about it. Running a hawker means the working hours are different from regular working hours. Running for breakfast crowd, hawkers will have to start way earlier than consumer. Running for dinner, hawkers will end their day until late night. Not to mention about weekends where normal office working hours get to have quality time with family, hawkers are usually working to serve the community. Their time to spend with family are also unusual

I think what they are putting up here is NEA run hawker stalls are not hiking rent to make food expensive. They are different to coffee shops and private owned food courts that charges higher rent that push up food prices. NEA good support our local hawkers.

In Singapore,it's almost impossible to keep the raw materials costs to the minimum. Unless you grow your own fruits and veggies,rear chickens and pigs and have your own fish farm, nobody could keep the raw ingredients to the minimum.

Most hawker center in Singapore does not open for dinner. It is quite a big problem. One way maybe when they bid, they have to chose whether to open for lunch or dinner and hence at least half of it will be open for dinner.

Hawkers center is basically a consolidation of our street food. Coffee shops, food court are in my view closely related to the Hawker Culture. Can’t mention one without the other.

the difference between hawker and food court - is that one is cooked by employees, another is cooked by the owner himself/herself.

Some hawkers tenant sublet their stalls. They charge 2-3k of rent. Though this is not allowed but they are doing it thru some loop holes. Do you notice that some stall have 2 difference sign board. The one on top of the shop and the below have different name. This is happening at my area. NEA should investigate and stop such practices. Make the tenant return the stall to NEA once they no longer use it for their own business.

Can NEA put a ceiling on the bid price and allocate about 5% to big organisation to bid for the stalls in the hawker center while leaving the rest to real local food maker? this way the selling cost is more appreciative

To the point of vibrancy /footfall... Margaret drive hawker center... So many stalls not open.. Some open for breakfast and others for lunch and dinner time, so to see 30-40% of stalls closed... Really not an attractive hawker centre...

it is not bad to good income if you do everything on your own as a hawker. but if you want to employ someone to do all the chores, then probably it is not so easy.

I agree that central procurement is difficult but I think it should start and move slowly. Given time, it will catch on. But central procurement for crockery and cutlery will be good as it makes the hawker centre uniform. It will also make central washing easier.

Price increase is not always the hawkers fault / choice. The landlords plays a part too. Especially if some laundry syndicate pays high price for the takeovers of the coffeeshops / shophouses.

Actually Dr Koh already described the current government's strategy by accident, make the expenses high, so that people work, so the GDP output increases. This is macro, he basically said a micro version of it as the reason for increasing price. Actually if TDK people form a political party, worth considering to vote for it instead

Unpopular opinion, but here it goes; most of the hawker food tastes bland. If you increase your price but your food improves, your sales could improve.
