You dont really get it. Sturgeons are a very rare species because the odds are 1/1000 and caviar are the eggs that didn't make it. And now farms are trying to harvest sturgeons so it will not extinct

For these fish, I don't think it is about how they are nurtured- sturgeons produce eggs in quantity instead of quality (which, imo, makes it a very dumb fish biologically). Most of the fish die anyway because they aren't built for life.

Caviar is not tasty 😅 it's mostly like tiny super salty tapioca with thick skin🤐. Salmon roe is actually much more flavorful if you're even into that kinda stuff. Hasn't affected me at all. You know the people who actually like Caviar are the kind of people who can get past the idea of eating "raw fish eggs" and actually enjoy the taste and texture. I'm sure those people already know where it comes from and where its harvested. Watch a video on how fast food is produced or how hotdogs are made and you'd get the same thing. Most food produced can seem disgusting if you view it in a certain way.

GuinnessandPizza That's a really stupid thing to say. I've had it and I liked it. It's like an explosion of saltiness. I also eat lump eggs regularly in holidays on toasts for example, which looks and tastes almost exactly like caviar and is a lot cheaper. Caviar is obviously not a normal food, it's more akin to peanuts or condiments you put over dishes to enhance taste.

In the harbor town I live in in Ohio (Lake Erie) Sturgeons are plentiful in our bay. I've seen them several times and even swam with them once. People here love them and love seeing them in nature. We do a LOT to make sure nobody fishes for them or hurts them. They're very docile water creatures and mean no harm to anyone.

My dad (from Iraq) used to go to a lake with his family, they go there to get fish to fry and cook since there weren’t many supermarkets and other sources back then. They’d fish shrimp and fish and more, my grandmother would open up the fish and get the caviar out. Caviar wasn’t that rare and my last gen family didn’t think of it as something amazing, most of them didn’t prefer eating it. Well? That’s how life is....

The high value demand is actually a good thing for conservation in many ways. Sturgeon will never go extinct if humans want them so badly. Wild sturgeon are a different story, of course, but it seems farming has taken over caviar production by now anyway.

Caviar, in many different grades, really is an amazing food to try. There is a reason it is rare & expensive. However, anyone can try it. It’s a garnish or spread on croutons.

There is a great company in California that farms sturgeon very humanly and sustainably. They are repopulating the sturgeon population and doing a lot of conservation work for the species.
