Jumping around in your creative process is actually normal. In art school, when we were being taught to draw and paint, our teachers encouraged us not to get stuck on finishing just one area. For example, it's not good if you're drawing a person and you get their eye perfect in every detail, but then you step back and realize it's in the wrong position on their face. When you have a greater vision, you need to periodically step back from the smaller sections of the work to make sure that everything looks good for the final product. Also, it's not uncomfortable to watch, so don't worry! Love your videos.
