I'm pretty sure the amulet is meant to transform people into animals associated with the Chinese zodiac (which also includes a dragon). You'd think they'd go all out on the Chinese theme if thats what everything was building up to, but at the bare minimum they should established more on what the mcmuffin was.

Her turning into a dragon makes perfect sense, cause the amulet has the Chinese Zodiac on it, cause following the chinese calendar every year has one of those animals from the zodiac represent the year. For example this year was the year of the Dragon and next year will be the year of the Snake. So the villains turned into animals from the Chinese zodiac.
