Academy-Award-winning actor and activist Susan Sarandon explains why she got arrested earlier this month in a chat with Katie, Saru Jayaraman , the president of One Fair Wage, and Jenny Almanzar, a long time NYC restaurant worker and One Fair Wage Organizer.
Saru Jayaraman is the President of One Fair Wage and Director of the Food Labor Research Center at the University of California, Berkeley. Saru is also the author of One Fair Wage: Ending All Subminimum Pay in America (The New Press, November 2021).

Susan is the real deal. She volunteers so much her valuable time to so many great things and works for real change without looking for what's in it for her. I have the highest respect for her, the antithesis of what usually comes out of Hollywood.

Problem is it's not about paying your employees, it's about competing against somebody who is paying minimum wage and you trying to stay in business, the bar is set low in USA but so are the costs. Where I am minimum wage is around 21$ an hour but for a small population we have the most expensive housing and costs, but we also have health care. Tipping is absolutely wrong though imo, it should be banned as a system because it doesn't cover all people involved in the product being delivered, the costs should be on the employer, not the public but change the system and the poorest people will suffer the most. Added: Ban or stop tipping and see how long it will take before minimum wage increases, so are "we" part of the problem for supporting an unfair system?

I have to disagree. I've been in retail all my life , sold my business in '08 the min was 7.50 my lowest paid employee made 17.00 hr, highest 22.00 . If you can't afford to pay a decent wage, you are either greedy or a bad operator .

@@antonyjh1234 Yeah, I'm with Patricio on this one. The competition argument doesn't hold water. If pizza isn't a competitive market, I don't know what is. There's a pizza shop in my area that is a (gratuity free establishment). I put those parentheses there because that's what is next to every single menu item when you order from them on Grub Hub. Now, that could mean that they just pay all their employees minimum wage in order to "compete". But I very seriously doubt it. (I'll ask next time I'm there.) Most places that do this pay their employees a much better wage than that. And this place has been here for a long time, and they just expanded it to take over additional retail space, twice the size, next to them for a bar and lounge. Somehow, I think they're competing just fine. And, this is in a university town. (Virginia Tech) Sure, that helps. But, in case you didn't know, rent and housing in big college towns is astronomical. So there goes that argument. And in another big college town (UGA), I worked for a company that recycled and resold surplus equipment and electronics that was the only game in town but probably shouldn't have been in business. (And now they aren't, at least not like that. The original owner went back to what he did before expanding with a friend of mine who is brilliant but a bit delusional.) They paid us a only a little bit more than minimum wage and often had to go unpaid themselves in order to cover our payroll. And they wouldn't or couldn't turn on the AC in the warehouse (in north Ga) until it hit about 100F inside. But then I've worked for employers that did just fine for themselves that wouldn't either. So, please. Spare us your capitalist free market talking points. Thanks.

Theres a limit though demanding such high minimum wage will put the little guy out of business. The only places that can pay the employees so much are the big corporations. Theyll win in the end. Also how about if you want to make a better salary try to get a better job and let the teenagers have their after school jobs back.

LOVE Susan. Minimum wage should be $20 and there should be NO exceptions.Sadly, many tip workers are opposed to non tip based wages.

As a Server of over 20 years, I do have mixed feelings about this issue. I make WAY more than $20/hour and I guess the fear of the unknown has a lot to do with it. If I only made $20/hour I would definitely not put up with all the stress and physicality of this type of job, yet I have no other skills and other jobs are not nearly as flexible with hours. What kind of guarantee do we have that we would still get tips on top of that base pay?

@@tracyleighbasham One would hope that the tips would just be smaller and you'd end up making the same money. Rest assured, there are many people being paid and/or tipped far less than you for far more BS and stress. Not saying you deserve less, but they deserve more. The context of tips is so the proprietor's overhead goes down when business is slow, but in modern business all that is calculable and they are guaranteed a profit, or they wouldn't have opened the business. We don't have ma and pa diners anymore. Businesses need to put their big boy pants on and if your job is worth $80 an hour, then they should see to it that you get that.

There are I’m sure SO many stories, but I remember waitressing at an IHOP, and then at a French Restaurant that actually *had women on the floor* but I would go out in D.C., or even on Campus-and ALL of the bartenders were men. When I finally got so, SO sick of it was in Santa Monica. Naturally they had me waitress pool side, and that kitchen was a long, long way away. Then, if I worked a banquet, we were SUPPOSED to share that gratuity, over seven or eight people, right? But this Hotel had figured out that the pay was just *too high* so-they paid us eleven dollars per hour, and I don’t know WHAT they did with the remainder of that gratuity-paid for people who vacuumed the rooms, who knows …?! They did this to us in England, too, so Americans THOUGHT that I was getting paid that money, but no-I got two pounds per hour and not even anything to drink much less eat! Still, get this: in Santa Monica, the *breakfast wait staff were ALL men* and it looked really strange, and I was filled in immediately, *’-Nobody eats dinner here, so obviously the men ALL get the breakfast detail!’*

In Australia, waiters get a fair wage, healthcare and tips(albeit smaller tips than the US).

yes, but the punters in US know that wait staff get miserable wage, (which makes the menu cheaper), so they tip more. Basically the 'advanced society' of US, uses slave labour, to serve their restaurants... I wonder who controls the tip jars...? the boss?

There was a study, some years ago, on the most stressful jobs for women. Waitressing was NO. 1 on the list! You are dealing with hungry people who cannot get up and help themselves - generally not even to pour themselves a cup of coffee or get a glass of water. So the customers are often aggravated to start with, just due to their helplessness and hunger. You are "on stage" throughout your shift, required to be nice no matter what. It is an 8-hour performance for 5-6 days a week, on your feet most of the time. You are dependent on the cooking staff to get the food to the customers before the customers become angry with hunger. Nothing you can do about problems in the kitchen. With delays, you have to become nicer and nicer and nicer. ('Sorry for the delay! Can I refill your coffee?). If they don't like the food when it comes, it's your fault. And all this is even worse if you're dealing with alcohol. On top of all this, you are way, way underpaid. Most stressful job for women except for maybe giving birth.

Your ability to feed your children shouldn’t be based on how “good of a service you perform on your job” either. Children having plentiful food that they love and which nourishes them should be a right without any conditions. True Food security is agency. Our entire attitude needs to evolve, incrementalism entrenched the toxic framework of wage slavery and manufactured hierarchies; asking for crumbs, arguing against tailored resistance, it’s diversion from where we need to be headed. Serving food, making food, growing it, all the processes of “serving” others, caretaking, hospitality, cleaning, repair work, tutoring, child and elder care, health care.. these are all vital foundational acts of nurturing that should be held in the highest regard. Life itself is dependent upon giving nurturing and needing it, period. Part of manufacturing gender binary tropes was to create a task hierarchy. An upside down one. Demand everything, the “fairy tale” if you will. If for no other reason than those kids referenced earlier, all kids, (all of us) who need so much more than “feeding”.

So much to take in, in this short clip. I love it. I'm pretty sure in oregon the standard min. Wage will be 14.20 per hr, the metro will be 15.45 and the rural will be 13.20. July 1st I think. I believe it is for everyone except farm workers. That's a whole other disaster of an industry. I Digress. So it is archaic that NY is pulling this kind of bullshit. Looks like the people We are supposed to be the boss of, have flipped the script while telling us we are still in charge. As is politics.

Everything you said here is absolutely correct, just wanted to vouch for your statement as an Oregonian waitress myself, including that tipped workers here get the same minimum wage as all other minimum wage workers. Every July 1st since 2016 the minimum wage has gone up on a 3-tiered schedule (highest wage for Portland, 2nd highest for other urban counties and the lowest for rural counties). Starting next year it will still continue to increase, but instead of the schedule it'll be tied to the CPI. From the website of Oregon's Bureau of Labor and Industries: "Adjusted annually based on the increase, if any, to the US City average Consumer Price Index for All Urban Consumers."

I'm so glad these women are standing up for their dignity. Most businesses, including those that have in-house unions, state during the recruitment that they have 'zero tolerance' for harassment but in reality in some cases the business policy end up being 'Zero Action' towards harassment. A woman's career is sabotaged because simply the moment a woman refuses to be 'the bit of fluff' at work, her career progression is destroyed. Bosses might try some soft and temporary remediation that soon will be forgotten and the harassment starts all over again as if lessons were never learned. We hold on to our jobs because it's what pays for our financial commitments. Some of us have studied a career related to our jobs and our parents sacrificed life savings to pay for our private education to achieve our positions. The workplace is not a joke! The work environment at all levels should be treated like the High Way. There must be a serious CODE OF CONDUCT people must respect. But where do you go without law? In a bar, you can walk away if an idiot starts molesting you, but when the bar or restaurant is your workplace... Where do you go? No one should be experiencing humiliation in the workplace. We all go to work to solve problems to the best of our ability, not to bring shame to others. You try every possible step to report the unwelcome events but the more you report the more you get gaslighted. If you try the legal way, the big players will go beyond the work walls and harass you or intimidate you even in your private life by hacking your phone, computer, etc. You name it! Businesses have now easy access to hyper surveillance technology and they will use it for the sake of RETALIATION. Ever since corporate power has become an untouchable jurisdiction and protects most businesses under its umbrella, they get away with so much crime and abuse. But this is it! Is how it is and we must not let them intimidate us. I applaud you all for the actions you are taken and wish you much success in your case.

In most European countries, service is included (though you can also tip for exceptional service) and bar staff have to be paid the statutory minimum wage. Edit...and, of course, healthcare is free.

Thanks for the share sisters 🙏 I might get in trouble here 😬 this is first time I’ve heard “ equal pay “ personally I find it questionable when waitresses are given low wages and depend on tips . It like WTH , if anyone is employed there employer is responsible to give them good wages 🙏 respectfully i’am not . That said when I eat a dinning facility , I do what I call “ giving a donation “ based on the care . What really pussed me off 😬 once I ordered food over phone and left a donation ( generally, I don’t cuz really there isn’t care , I just do it to be nice ) that gave me the price . All good , right ? , I get it and pay and they charged more . I ask why the increase . They said they take out gratuity ….. essentially they tipped themselves and snatched my donation . I’ll never go there again and for me that is total BS 🤔 Much respect and appreciation for the wisdom shared ….. Be well and Happy Holiday ✝️

I didn't even know that ServSafe was a lobbying front. I'm ServSafe certified, myself, but my former employer paid for it. And, there's the rub. I'm willing to bet that food service employers can get a tax deduction for paying the lobbyists under the guise of covering safety training costs. (Any tax accountants out there that can verify this?) So, they win either way, of course.

Why did Susan not bring up the fact that most of the world pay a good wage and tips are a bonus. UK and if you are 25 years old its £10.42 and that is $13.19

Interesting. 🤔 I went to Paris in 2008 and was told by my tour guide/mentor that tipping was considered an insult But I was ignorant of the broader context. I almost ALWAYS tip well, unless I'm given a reason to act to the contrary Cuz As a former taxi driver in NYC, the tips were equally if not important than the fare itself.

Police can CHOSE to look the other way, that's WHY people don't always get a citation when the get pulled over for speeding or even reckless driving. My X wife said "playing victim" she always got out of tickets, when she was driving reckless. And D/A don't HAVE to press charges, it's always poor and homeless people that they want to throw in jail and harass, because the police and DA like low hanging fruit, it's much easier to harass homeless people than chase thieves.

Can you hire nuns to waitress? That would work for better optics and lower harassment. The tippable worker minimum wage is the minimum wage. Policy makers were trying to set categories for lower pay with teenager/trainee/apprentice minimum wage. This redefinition of the worker category doesn't fly unless the jobseeker is prevented from getting a fair wage.

Mostly I agree that tipping is a bullshit way to escape paying living wages; but any woman that expects to go bartend to a bunch of drunk men, and expect the men to Tip on how hard-working and sensible the waitress is, is young and naïve, desperate or isn’t thinking clearly.

@@flash_flood_area not to that degree though. The more intoxicated the man the bigger the idiot. I’m a dude, but I’m old enough, and have enough of a conservative upbringing, not to be an out of control pig who lets the senseless organ determine my actions. Not a justification, and not that they necessarily need to tolerate it (unless they’re applying for a prostitution job I guess,) but women need to be realistic about what they’re walking into Beforehand, know their boundaries, and refuse to let anybody cross them. that obviously doesn’t mean you can force people to tip you based on your Competence, so people need to start opening no tip restaurants and bars. I would fight for that. Or open one myself if I had the desire and money.

I am an American and I live in Brazil, even here where the wages are much lower converted to dollars, you pay a minimum service fee of 10% when you eat in a restaurant and Brazil has a public health care system too. When I go back to the US I find the whole tipping 18-20% ridiculous, just give the wait staff a livable wage amd lower the service or tip fee to 10%. Makes more sense.

@@tracyleighbasham my country? Did you miss the fact that I am American? It’s a custom that has become obligatory in the US and that is primarily because most wait staff is paid less than minimum wage, so, it’s not in fact a custom, it’s messed up.

@@tracyleighbasham I never edited the part about me being American, that’s always been there, I edited some typos and those were edited before you read my comment, so it’s not my fault you have poor reading comprehension. Tipping as an extra maybe be older than the minimum wage, but it became built into a wage and that’s not what tipping was originally about, it was used as a non-obligatory extra for good service, when it became built into the wage is when things went side ways. No other developed country bases their minimum wage in service jobs by this standard, only in the US has it developed into an obligatory necessity for service workers. That’s the pointvof this entire discussion here.

Tipping should be eliminated. It is so inconsistent and subjective. Why not do what many European countries do---add a "service charge" to every bill. That gives your wait staff a consistent paycheck.

The server who delivers the food has the easiest job. Tipping a person because they might look good is wrong as a system. Tip your dishwasher for a change.

It is anyone's preference to tip. Not written into law. I like to tip if my coffee is up to my expectation and if it's super good, tip a little more. Don't take my option of tipping away. People should make a good wage regardless. If it's good customer service you get a good tip, if it's great customer service you get a great tip, even if the food sucked. If it's shity customer service.... No Tip For You. And if you want to beat a dead horse to death and say, "what about people who can't afford to tip? How will they feel?'. I say get a grip and realize they are making a good wage (in the dream), so a tip is bonus for being a wonderful person. And if everyone was making a good wage, people wouldn't worry about tipping.
