For people not 'Murican Shake n' Bake is a processed breading used when roasting chicken or pork chops. You put it in a bag and then add the meats shake the bag of meat/carbs and then but them on a baking sheet with foil or parchment paper and then cook it. Hence the shake and bake. It was briefly mentioned earlier in the film that Ricky either won or he wrecked, so he was way too inconsistent to ever contend for a championship. Since Ricky's career started in the late 90s, he would have raced under the Winston Cup points format and the original Chase format (2004-2006).
