Yess, when I made this cake it took me 7 hours. Opera cake layers use almond flour and my cake was so delicate it broke when I tried to pick it up. So I had to re do one of the longest steps. It turned out PERFECT in the end but it definitly took some struggle

If the ganache is too hot it would melt the coffe buttercream and if too cold doesn't spread well. Also the REAL HARDEST part that wasn't metion its that this 10 layer cake can't be more than 4cm high

The stacking is the hardest part of this process as it needs to be thin for the 10 layer cake to fit in one bite. If the ganache is too hot it will melt the butter cream and if it's too cold it won't spread as well. Not to mention this thing is brittle asf, you really need to be patient with this cake as if you're too rough with it, it just crumbles and you have to redo what part of the cake you just fucked up or redo everything.

3 hours without resting/cooling time a a guess. The cake needs to be totally cold before cutting into pieces/handling. The syrup time to cool. The buttercream probably needs resting time before being spread. Once the layers are put together, the cake would need time to rest (become firmer) before the chocolate ganach is spread over the top. You can't really hurry physics, that's when things go wrong in baking 😊

Opera cake really isn’t hard it just requires patience, you cant really mess it up unless you try to rush the process. From scratch baklava is far harder, takes a real special person to sit down and hand roll hundreds of layers of pastry dough transparently thin while applying butter between each layer.

Thank you for detailing this! I don't think a lot of people realize how much work goes into making a delicious dessert. I made this in culinary school. We had a chef fly from France to teach us. I can proudly say that mine came out really well. I know that because he told me so and that praise stayed with me. I brought it to work the next day where our most grumpy boss ate almost the entire thing and had the biggest smile on his face the whole day. He couldn't stop telling me how great it was. It was one of those core moments for me where I realized how eating something delicious can have a powerful affect on a person. It can really brighten someone's day. To me, food is it just something to be sustenance to the body but rather an experience for the soul. And that's why I became a pastry chef. 👩‍🍳❤️

The only thing that looks hard is getting the ganache just right. 3 hours isn't a whole lot. I've spent upwards of 100 hours on a single wedding cake that could feed 600 people. Homemade cake and gallons of homemade vanilla custard Swiss meringue buttercream. Plus multiple flavors and multiple fillings. It took 3 days alone to decorate. About 2 hours just to set up correctly and set up the fountain and staircases plus all the other components. And I am a home baker. No fancy anything and no equipment to make it quicker or easier. I also made homemade lemon curd which take take about an hour for the amount I had to make. Plus I used a channel knife to cut the lemon peel into strips, candied the peel and rolled it around chopsticks to make curls before letting it dry and coating in sugar. Oh and I did I mention that the cake started melting sometime during the reception because they wanted me to set up the cake by a window on a sunny day even though I told them it's not a good idea. I spent about 2 hours running back and forth trying to fix the cake while getting the other stuff together to get ready to serve it. So it's like oh snaaaaap...JUST 3 hours?!😂😂 I'll take it! I'm gonna add this to my repertoire

​@@nessesaryschoolthing Your almond meal must properly grinded, not too coarse, but also not turned into a paste. You have to fold the dry ingredients into the beaten eggs, easy to leave streaks in the batter, but if you mix it too much it will deflate. It's hard to spread the batter evenly, sometimes it looks fine but comes out of the oven uneven. Worst case scenario, some parts are crispy and others are thick. You have to measure and cut the Joconde in identical pieces. The ganache must be in the right range of temperature. If it's too cold, it will rip off the "skin" of the cake instead of spreading. If it's too hot, it will just pour from the sides. Buttercream can be tricky, your butter must be at room temperature, but you also need to let the egg-syrup mixture cool down. It's easy for a beginner to end up with a liquid or lumpy bettercream. Each layer must be smooth and spread evenly, especially the top layer of buttercream. The glaze must be, believe it or not, at the right temperature so it doesn't melt the buttercream or thicken instantly before it's spread properly. You need to chill the cake for several hours so you can cut the sides cleanly with a hot knife, then let it come to room temperature again so the buttercream is smooth. you have to withstand the constant "Does the mixer really have to run so long" and "why are there so much dirty dishes" from whoever is in the kitchen with you.

I just did this as the dessert for the banquet that was held for the graduating culinary students. And man, it is quite the process, especially at such a large scale AND by yourself AND the first time making it. I did have assistance during the assembly part, thankfully at least. But hey, it turned out delicious, and my pastry chef even gave good feedback, and there were no complaints! I did struggle a bit with the Glacage though.
