What do you do to fully remove the burr ...

After you have created a burr on both sides, an therefore reached the apex on both bevels you will move into sharpening. Through sharpening each side simultaneously the burr formed on either side will be so small it will not hinder working performance. There will always be a final stoke, however is not necessary. If, nonetheless, you find you want to work that last burr out you can take a strop and run it flat against the bevel to remove the final bit.
