You can also salt aubergine slices, squeeze out a bit of the liquid, fry them in (neutral) oil, then (out of the pan), squeeze some lemon over it, and finally drizzle some nice peppery olive oil over it. Lovely. Works with zucchini as well, but you don't have to squeeze that.

Had to comment Derek. When you said "If you need medication to eat the diet you are eating, there is something wrong" it brought tears to my eyes. I was diagnosed with T2 diabetes and took medication for well over 4 years. Then I discovered plant-based eating and slowly turned my life around. I am now (a proud) vegan, and almost 1 year medication, and diabetes free because of the plant-based diet! Keep up the good work and inspiring change in people!

@Kweesh I was not talking about "controlling" I was talking about reversing the diabetes. And extensive research (and my own experience) has shown animal fats to be a major (if not the) culprit in insuline resistance. So yes avoiding animal products saves lives.

My migraines were also amplified when I ate meat. I honestly believe some people’s bodies benefit from different diets at this point. I’m not vegan any more, but I’m still vegetarian, and I have to say staying away from meat and focusing on making the majority of my food being whole plant based foods has helped reduce several of my other chronic illnesses as well. My body just simply feels better when I don’t eat meat, and that is more than enough reason for me to never eat meat again. I won’t pretend to know WHY it is that way for me, but if I never experience chest pain from the food I was eating again it’ll be too soon. My partner feels just fine after eating meat. His body likes it and he’s not negatively impacted, whereas my body files an official complaint and threatens to riot if I do not immediately return to the agreed upon approved foods list.

Oh, I so agree. I lost my 2 black labs (brother and sister) within a year of each other. I used to love on them in exactly the way I see here. They were the sweetest, happiest pair of dogs. They made me just as happy. I love watching Frankie too.

I practically want to cry. THANK YOU for the oil-free. Seeing a pro get into the details of working with oil-free is such a relief, so confidence inducing, so freaking gratifying. I know I can just eliminate the oil - I know I can use an air fryer or parchment paper or a silpat or broth/water/aquafaba/some kind of liquid but....after we take that detour, we're usually on our own in a recipe. To chase that down - to stay on the job of still making something great but minus the oil - is top-tier and a real kindness for us non-pros out here. MUCH appreciation Derek.

But your brain is mostly fat & takes physical damage if it doesn’t have adequate fats in the diet. They’ve linked low-fat diet with dementia, and also lack of C15:0 which is mostly in meat fat. My mother-in-law died of dementia and I just got divorced three years ago because my husband has dementia and went all paranoid before the doctors would do anything. he’s going to be gone in 5 to 10 years in the same horrible manner his mom went. I will do absolutely anything it takes to avoid that after witnessing it. Everybody makes their own choices. But all these extreme diets are being discovered as unhealthy. Anything to extreme seems to be bad for you. I’d rather balance out everything. That’s my choice. ❤

@@chelsea_1961Just choose good fats, i.e. the fat that comes naturally in the food. Processed oil is very nutrient poor but calorie dense and definitely not good when you’re on a vegan diet. Sorry to hear of your troubles. My best wishes to you.

I was not at all expecting fried fish from eggplant. That is straight up magic! OK, if you're taking requests, I'd like to submit two. First, a lesson on how making my tongs click and clack the way you do. And also, I'm the biggest sucker for a grocery haul. I'd LOVE to see what kinds of things you buy regularly. And if you buy according to what you're making to eat for the week. Not when you're planning a KZbin video. Or if you buy certain things regularly and then create meals based on what you have/what you feel like eating on any given day.

Pro tip ! Dry toast your panko mixture before breading your fillet and putting it in the oven and you'll get a near identical texture and color to the fried version ! Just don't go too far dark on the dry toastig as you want it to finish in the oven, not burn. Also, I really dislike the texture that nori can get when it becomes soggy, so I always find it better to make a broth with kombu to flavour things instead. So if you're like me you could easily add some kombu broth to the buttermilk mixture.

Fabulous recipe. Makes it so much easier to prepare the eggplant as filets vs slices and then baking in the oven before frying in pan. I made mine with Italian seasoning breadcrumbs for more of an eggplant Parmesan. I’ve been making it the other way for 40 years like my mom used to make it and this is so much better and easier. I do a similar breading with panko and spices for tofu fillets, mushrooms and cauliflower using an olive oil spritzer which seems to work pretty well to add color to the panko when baking. My father was born in Serbia in 1908 so you got .... Greek dishes, Middle eastern ; he actually translated a cookbook because ... let's face it he made a mess in the kitchen I miss my guys .... from his notes this is an idea .... cut the aubergine into 1 inch steaks and salt to remove excess liquid, wash off salt pat dry; if you have a grill pan season with lemon ok salt and liberally with granulated garlic. It's incredible. as always tx for your channel.

I can't wait to try these recipes. Looks delicious. Last year we had lots of eggplant is the garden. This year, not so much. Maybe because of all the heat. I'll just purchase some from the store. Moreover, I would love you to experiment with making plant-based yogurt. So far, I haven't found one that I really like. I do intermittent fasting, so getting enough protein is on the top of my list. I currently consume dairy yogurt, and kefir. I only eat within a 6 hour window. 12 - 6 pm. Call me crazy. 😂

Thank you for your amazing videos and expertise in vegan culinary delights. I agree that any way of eating that does not involve an animal is hands down the best. I do appreciate you mentioning that you will sometimes demonstrate without the use of oil. It's not always easy. If I could fry, saute or toss everything I eat in oil I would be in heaven. Unfortunately, my genetics does not agree. Once I removed oil, vegan butter, cocoa butter, and plant sterols, my dangerously high cholesterol dropped successfully and my doctor stopped bothering me about taking statins. I have found ways to make food taste good without oil (though oil does make certain food taste great). Thanks for continuing to create great content!

Looks so delicious! I will try this out soon. I made zucchini cakes (mock crab cakes) last night. The garden is having a good growing season this year with zucchini. Looking forward to the next video and Frankie! The bear :)

Please don’t change for the whole food plant based eaters (and you folks stop expecting the world to adapt to you) - I’m whole food plant based but first - I’m vegan. And I assure you that us whole food plant based eaters can learn to modify recipes and can also access a legion of whole food plant based cooks and resources. Stay Derek and Frankie 💚

As a vet I have the medical reflex everytime I see your dog eating something, to say "it's not good to give dogs our food" but then I realise is all plant-based, no cheese fat, no bacon, no sausage! So nothing to say mate ! Very happy and healthy dog indeed. Thank you for sharing all your chef secrets with us. Everything seems so easy when you do it! 🎉
