Wild Boar Chili & Cheddar Cheese Boudin.
I had leftover Braised #wildboar from a hog hunt last year. What better way to use it up than to make #boudin
This may upset a lot of people from #Texas as well as #Louisiana
Recipe:
3 lbs Braised wild boar
2 lbs pork bell (you need the fat)
1 large onion diced
3-4 bay leaves
2 California dried chilis (deseeded)
2 guajillo dries chilis (deseeded)
5 garlic cloves
2 C beef stock (to boil chilis and garlic)
2 tbsp ground cumin
4-6 tbsp chili powder
1 tbsp cayenne pepper
1 tbsp dried thyme
1 tbsp Mexican oregano
1 tbsp garlic powder
Salt & pepper to taste
2 tsp MSG (you're not going to die, calm down)
1 tbsp fish sauce (extra umami, or you can use W sauce)
1 can fire roast tomatoes
1 can red kidney beans (omit if you're from Texas 🙄)
8 jalapeños (seeded and chopped)
2 bunches of scallions, chopped
1 lbs high temp Cheddar cheese
Cooked Jasmine rice. I like a 50/50 ratio of cooked rice to meat for my boudin. But use however much YOU LIKE.

If you DON'T have a sausage stuffer, you can turn these into #boudinballs
