You should cook the scallops on high heat for about 45 seconds each side, it'll keep them soft on the inside and less like rubber.

I have never seen scallops so overcooked in my life, and yet these guys scarf them down like they were amazing. I guess I will have to overcook a batch just to see if this is a Mid-West thing (scallops are rare and thus hardly ever on the menu) vs an Island thing (were we eat Scallops often and in various ways).

Just FYI about the new duck lease I really think it would be a great investment. The year 2000 Land was selling approximately $1500 per acre. The year 2021 land is selling approximately $3200 per acre. The price of land is only going up because we know for sure they’re not making any more. It’s one of the best investments you can make so I highly recommend do it if you can.

@@michiganmike3268 i’m not sure how much you’re paying for property taxes but for the 150 acre Farm I had it cost to me about 1200 a year which is only $24,000 over 20 years so you’re still gonna make money on it. If I would’ve kept it that amount of time at them same numbers minus the $24,000 in taxes it would still be $231,000 profit.

@FLAIR I enjoy the catch and cooks on the channel. Trial and error makes for a good recipe, as you and have been doing, and have come a long way since the early catch and cooks. I worked most of my life in the service industry, mostly in the kitchen. I have worked in many states and held almost every titled position in a kitchen including sous chef a few times, and was even fortunate to hold a head chef position for a few years. In all my years working in kitchens hand breading fried foods always differed from restaurant or region. Many years ago I discovered a very simple yet apparently rarely known way to make a killer breading that will suite most of your catch and cooks, especially frog legs. I've kind of kept it a secret and have been wanting to share it on my channel for a catch and cook video. I had something special planned for it but haven't been successful enough with the catch since last summer (summer only catch). I am going to share it with you and your viewers. Give ot a try some day. Outwest Pan and Prospect Almost Secret Catch and Cook Breading Recipe: -Flour -Seasoning -Catch Fill container with more than enough flour. Season with whatever you choose generously. Toss catch in flour to generously coat. Lay out catch not touching single layered on a sheet pan. Use wax paper between layers if needed. Let sit in fridge for one to two hours. Deep fry at °350 - °425 depending on thickness until golden brown. In a large bowl toss in wet or dry seasoning of choice. So what happens here? The flour basically creates a dough around the meats by absorbing the naturally released moisture. The dough/breading has a solid grip and very little is lost during the frying process and you are left with a nice thick crunchy breading. Hope you all enjoy!

Regarding Scallops. Way I was always taught to do them was, have the pan at bacon level frying temperature, lay the scallops into the pan in a clockwise manner. Once you've put the last one in, the first one should be ready to turn. Turn them all, then turn the hob/heat off, let them sit for about 20 seconds, then season with salt/pepper, and pull them out of the pan onto a warmed plate, let rest for about 30 second. Enjoy. (I'd also suggest shoving a dash of soy sauce into the pan as you turn them)

Oh and if you REALLY want to get bougie, splash some white wine (ideally Pinot Grigio or a Chardonnay) into the pan before the scallops, and reduce down.

Andrew, im not sure what negative comments you get but someone or hopefully one of your buisness adventures can show and give documentary on how talented and busy you are and how hard working you are. Here's a few hints to cooking perfect scallops from someone who scuba dives for my own (bay) scallops in MA. Scallopps should be thawed first if they are frozen. Fresh are better. Scallops of that size should only take-out 1min per side. They are easily overcooked. Additionally keep spooning the hot oil (should use butter) over the scallops over them until the first minute is done. Flip and repeat. Heat should be medium/medium high. They may feel under cooked, but they are not. They cook quick.

Flair, you should set up an automatic feeder for the animals. Just use one like what's down at the pond feeding the fish! Also, get you a little .22 hand pew and holster for froggin! Lot easier to have it on your hip than lugging around a .22 long pew.
