Using a wild yeast starter created earlier, I will start the process of making 2 quarts of apple wine complete with a tasting 12 months later.
Note: I am not a professional winemaker. I hold no responsibility if the results of your winemaking causes injury or ill health. This is as natural (where possible) winemaking channel. The wines made on this channel do not use sulfites. You may use them and\or yeast nutrients and or energizers if that is how you prefer to make your wine/mead. This channel uses pasteurization.
During the first 3 days give your musk a good stir, and to break up the fruit cap that will form if you are not using straining bags. Rack into secondary after 5 - 7 days, and continue to rack every 4-6 weeks until clear. Degas, back sweeten, bottle let age for at least 12 months total.

Keep it up, big Chuck! I like what you’re doing! Personally, I would love to see a video on different ways to collect wild yeast. I tried it a couple times with pawpaws, but failed. Headin to the woods in a couple weeks to try again. I make corn liquor, so corn wine video really tickled my fancy.

I just had a wild yeast start in my mash on its own. I gave it 24hrs then pitched a proper yeast. We will see how that effects the final product

im curious about the difference between a apple mead and a apple wine. i have been using maple syrup in the apple win i make myself to add tannins/abv to wine and am wondering if i should try honey too.

Mead is made with honey instead of sugar.

@@DIYFermentation yes, i know that, since you have tasted both im wondering what does the honey brings in term of taste. i tried commercial mead and it was just sweet to me, i didnt taste the honey, like at all. maybe it sbecause i didnt know what to look for. some have spoken of some kind of a bitterness. do you get that too ?

Any issues with a completely dry apple wine? No back sweetening at all?

Thanks for the response. I got a 6 gallon carboy full of apple wine that has fermented to dry which I used golden raisins and some wine tannin to help add body too. I'm a lover of dry dry wine, just seems most ppl backsweeten their apple/fruit wines.
