There's an awesome pickled "conserve" recipe that's worthy if interested! I did 11 half pints already this year and still have some from last year. Alan Bergo @ "Forager Chef" has a great "Chantrelle Conserve" recipe.. I guarantee you'll do these again and again once you've done it once and tasted them! Works well with others too..

As a fellow Canuck food prices are absurd! I have been serious about food storage since 2009,I can’t tell you how many people have made negative comments to me about it,I don’t care but don’t come knocking when shit goes sideways and you’re hungry. Prepare today survive tomorrow! We love foraging and growing our own food! Every home needs a garden !

I vacuum sealed my dried chanty's, and after a week they got soft. They also seemed to have kind of a funny smell.

I just found 8+ Acres of Golden chantrell mushrooms, we just put a 1200 pound bull calf in our freezer so I guess it's dehydrating until they're gone. Thanks for the video it was very helpful. Im a new subscriber now 😊.

Give it a try! We find it a better tasting product than the dried ones. Both are good, but we do indeed prefer the sautéed and frozen ones.

@@Wilderstead I'll second the freezing! I saute in a bit of butter and salt until the liquid is drawn out, like in your pan. BUT...I stop sauteing them, drain them into a bowl, through a sieve. Put drained shrooms in a separate bowl. Once all are done, I prep vac bags, fill equally with shrooms, then add back the drained liquid evenly between the bags. Freeze then vac seal. You could also just keep the saute juices separate and freeze for a soup base. I like having the liquid in with the shrooms. I figure why waste the broth when it has flavour too. Your Chant's are a nice orange. Our's here on Van. Island are pale. We pick around our property. We get them anywhere from a teacup saucer size to a dinner plate! Hope this year is good. Last couple have been a bust. Same for Matsutake/Pine Mushrooms.

Nice chanterelles I am a harvestor of mushrooms, berries and medicinal herbs. Chanterelles you can eat straight up, but are great when fried with bacon onions and eggs. There are LOTS of mushrooms you can eat straight up! But you must be very well versed in which ones are dealy poisonus which there is NOT that many In North America (I harvest in the Boreal /Canadian Shield) Chanterelles you do not NEED to cook, all you have to do is let the sun dry them either whole or you can slice and dry them outside in the sun which will also give the mushrooms VIT C you do this for 3 days bring them in when dark outside. So if you want to infuse your mushrooms with Vitamin C let them get some sun!

The sun will potentially increase Vitamin D, bud, not vitamin C. They grow outside exposed to the sun and have already absorbed as much as they can for the most part. And yes, if you like, you can dehydrate outside. We harvest a very large amount of wild foods too.

Everybody talks about how healthy and vitamin rich mushrooms are. But what amount of vits and minerals is actually stays in them after cooking? For veggies and so its about 20%, but eating mushrooms raw and get those 100% isnt really a good idea like you said.

Chanterelles are entirely dependant on the surroundings they live in. They’re a mycorrhizal fungi, the bulk of their being lives beneath the soil and is never seen. Let the area be itself and chanterelle fruits should continue.

@@Wilderstead I have been, but trees (fir mostly) and other plant species are taking over. It's a small area, a lot of moss but again there is no stream in the area...I know that's not always important...but the forest is taking over and the chanterelle population is declining. Love Chantrelles! I pickle and water bath can them also along with cooking and freezing some. I love the pickled method. I just did 11 half pints and still have a couple pints from last year. The pickling or "Conserve" is super tasty!! Didn't think dehydrating was good with these though, so learned something off of your video! Thank you! What's your preferred use for the dehydrated Chantrelles?

Another awesome video! I am loving these. We are moving up to Zone 2 next month and hope to follow some of your tips. Can you please show us how you cook with the dehydrated mushrooms as well? Do you just stick them into stews etc. Or do you need to rehydrate first? Thank you and keep up the fantastic content!

There is nothing wrong with soaking mushrooms to clean them for 1 min and repeat until the water is clean.

Why add butter and spices before conserving/freezing the mushrooms? Adding butter/fat will only shorten the time they can be stored! I only boil them for some minutes and after cooling, I just Freezing them in their own juice/brine and they can bie stored for years in the freezer!

I describe it as peppery. BUT, the fact is I like them and I hate vegetables. ( I still don't think carrots are actually food for humans ). I eat them in the woods as I find them unless I have an occasional visitor I want to impress with my Bear Gryls imitation.
