Hey Yeung Man, I can't explain how helpful your videos have been. I've been suffering through a bout of depression recently, and through your chilli garlic noodle recipe, found a new passion; cooking. I use to do it as a treat for myself, but now I barely eat frozen food if I can avoid it, I'm always in the kitchen either making something I'm comfortable with, or through your videos, trying something new. I made this yesterday for my family and me and them loved it! I didn’t have exactly all the ingredients. I substituted the broccoli for cauliflower, and seasoned fried tofu for the sausages. I didn’t add celery or bell peppers. In addition to the onions added to the pan, I added 1/4 cut onion to the cashew milk, and added basil instead of oregano. It was sooooooo good, rich, creamy and flavorful. Thank you!!

I love that you're modelling healthy yummy cooking for yound men! It's such a vital life skill. Too many people I've known have not known how to cook. I was taught it's important to make one good meal a day for oneself. Cooking for others (and being cooked for) nourishes not only our bodies, but our hearts and relationships. I think it's important for bonding, because I've noticed the difference in relationships when shared cooking happens vs when it doesn't.

My hubby got diagnosed with diabetes. I'm vegan .. he's not. But after his diagnosis I (and dr) told him he had to change his ways. I got rid of every bit of unhealthy junk food and put him on a healthy diet. Yeah 20+ years and i want at least 20 more! He lost 60 lbs, feels better and few times a week he helps me prep veggies and stirs what's on the stove. lolol Cooking together definitely brought us closer in new ways and I don't feel like just a housewife/cook. He's not 100% vegan... yet, but I'm getting him closer every day.

Well I made this soup tonight and despite my budget been very tight which meant I had to make a couple of substitutions with the milk and plant based sausages, I can say it was absolutely delicious. My husband is English and if he enjoys a meal he will say “ well that weren’t bad” or “ rather tasty” in his book that is high praise . tonight I got a 9.5 out of 10. 😮😮😮 Winner winner soup for dinner. Ok so I’m making this soup for dinner again tonight, it’s still cold in my part of the world and I can’t wait. 😊😊😊

I watched this video yesterday and the soup is currently simmering on my stove. I made a few substitutions (zuch for brocolli and lions mane for cremini, varied pepper from the garden we just put to bed for the winter) and it smells amazing already. I have made this creamy vegetable soup 4 times! It gets better each time because each time you learn a little something. First time I did not soak cashews and did not cut veggies small enough. Second time i cut smaller & sauteed the veggies a little longer. Third time it was just perfect! I didnt add the corn, i used Herbs of Providence instead of Oregano and i didnt have any pesto. 4th pot on the stove right now. 🤗

My gosh, this is a lovely, warming, healthy and comforting soup! My husband and I are vegetarians, but neither of us like the taste of plant based meats, so the only change I made was to add some spices that would normally be found in sausage, like fennel, thyme, sage and a little cayenne. Thanks for the suggestion of pesto as a garnish. As it happened, I had some pesto in the freezer from last year's garden batch. Thank you so much for this super delicious addition to our weekly rotation!

Will, I just made this soup for tonight's dinner and it is pretty yummy! I was a little hesitant about not having a food processor for the cashews. It would have been smoother if I had, but to be honest, once you're into the eating part you don't notice. I'm enjoying my second bowl as I type! Thank you for this recipe

I have soaked cashews and then chop them up. I used my baking hand held mixer for years before I got a standing blender. If you have one.. used to be pretty easy to score a nice one and even a blender at thrift store. No it won't be vita mix brand.. the thrift stores have gotten slim pickins n some expensive. I live in a small city .. too small. Just a thought because I've been there and definitely miss all the great appliances in almost new condition I could score. I say .. ain't no shame. Lol.

I just had a thought: How about chopping the cashews and (hot) water but then letting then soak afterwards for a half hour or so, and then blending again? I bet the result would be much creamier. I do have a Vitamix but I always presoak my cashews a bit anyway. Just "feels" like they will be creamier that way.

@@sarahdee374 I just saw one today for resale for $125. If I wanted to do a lot of cooking that requires it, I'd snap it up. Last I used at a friend's, I used it for pancake mix with oats (the mixer shreds up the oats in the mix) and have also made smoothie type drinks at her home with it.

I just made the soup and it is, indeed delicious and the instructions are so easy to follow. I particularly liked the idea of dicing the veggies (onion, carrot, celery) into very small pieces. It took a little longer but it was totally worth it. The pesto was the final bit of brilliance. Very well done, Sir! Next time, I might roast additional sausage because I wasn't able to follow the advice to refrain from nibbling too much once the veggies/sausage were done. I have no willpower!

Re-veni, re-vidi, re-vici… I made this soup again, this time a double recipe, for a larger crowd. That is a lot of soup. This gave me an occasion to appreciate it to a deeper level, beyond the exciting discovery stage. As mentioned earlier, this soup somehow stays with us and lingers in our brain. I recently came upon a Korean word which may describe the situation: Siwonhan-mat. The third taste of Korean food. ´ Siwonhan-mat is a refreshing and pleasurable taste experienced through the body rather than by a sense of smell or taste.´ A unique and pleasurable sensation which lingers and is experienced during the digestive process. Of course I am only a beginner but I thought this was interesting. Consciousness, awareness and appreciation.

Cooked this soup yesterday and it was delicious. I omitted the yeast because I didn’t have it. After boiling the carrot, celery and red pepper for about 5 minutes, I took out half of the boiled vegetables and blended it. Put back in the pan with the cashew paste and roasted vegetables. Simmer it on low heat for about 10 minutes . I omitted sausages as I didn’t have any. Product was awesome even without the pesto. This will be my vegetable soup recipe.

I made this soup the other day and it was quite nice. I did leave out the red pepper as I didn't have any and was not too happy with my choice of vegan sausage. Other than that it was very, very good.

@@YEUNGMANCOOKING Glad you like the idea! It's something I've tried before with your curried split pea soup recipe as a topping with parsley to garnish -- my husband thought it was delicious! Almost like bacon bits lol. I find it's nice to have a way to sub for plant-meat type things since they can sometimes be pricey or tough to find (albeit super tasty 😋).

Made this with pine nuts today; roasted the veggies I had on hand…added mushroom powder since I had no mushrooms but wanted a little shroom vibe…oh wow its so good! Thank you! I will keep this recipe forever!

Made this for dinner last night & it was fantastic. Doubled the broccoli, mushrooms & pepper. Used 3 beyond sweet Italian sausages. Broth was the chickpea cooking fluid from the last batch.

I love your recipes and the fact you don't say "this is so delicious I make it every day" unlike some others on KZbin!🙄 Thank you for posting the recipes, though as a European, I find the use of cups then grams on the ingredient list confusing at times! As for oven temperatures in Fahrenheit, the USA needs to get with the rest of us and use Celsius. Your videos are so well made and after some googling I manage to convert American cups into grams.😃 Thank you.

I made your mushroom risotto - without a second thought, I found myself sourcing the ingredients: First time a risotto didn’t come out as inedible flour-paste! I couldn’t get Maitake, but as all my ingredients are ordered online, I obtained some wild mushrooms: your hint of ‘dry-frying’ first made a world of difference! Thank you for sharing! I can’t talk highly enough how delicious this soup is! Thank you Yeung for clearly explaining each step! This is definitely what I have been looking for on KZbin. The recipe turned out one of my best soups ever. Small recommendation would be to move cashew step a bit further as we use it at the very end. I’m now waiting for the next recipe!
